Notes: Based on this Randy Mosher recipe: https://www.homebrewersassociation.org/homebrew-recipe/beer-recipe-of-the-week-yellow-diamond-belgian-pale-ale/
Scaled to 1 gallon; substituted Belgian Pale for Belgian Pilsner on hand; cut the orange; added pumpkin for the season.
Cut pumpkin in half, de-seed, cut into slices, roast 350F 1 hour to get good caramelization. Cut slices into fine chunks -- skin and all -- for addition to mash.
Ferment 66F = 18.9C. |

Notes: This beer is designed to have a lot of dark fruit flavors like plum, fig, and raisin. Brown paper bags sometimes remind me of plums since we used to ripen plums in brown paper bags.
This was part of a group brew at Rob's house, this was my contribution. Came out a little stronger than anticipated, not sure how that happened. I made a 1.5 quart starter because trappistale yeast usually needs a little boost. I actually tasted the starter and it tasted pretty good itself. I should probably make a belgian pale ale with the same yeast at a future date.
Water adjustments: 1/16 tsp sodium bicarbonate to adjust the mash pH |

Notes: It has been quite a while since I made this and my Fiance accidentally through away my notes so I'm writing this down from memory I don't remember the OG or FG but It turned out Way higher ABV than stated above About 22%. After pouring Wort into carboy with 2 gal cold water I aerated for about 30 min.
I let ferment for a little over a month (This wasn't intentional I ended up moving and didn't have the time to bottle but I'm glad it happened) Then bottled normally.
My original plan had been to make a Honey Dunkelweizen But when all was said and done it tasted much more like a porter. Very Smooth taste with a slight sweetness, but don't let that fool you it packs a mean punch! I wouldn't hop in a car after drinking one if I were you! I hope you enjoy it as much as my friends and I did cheers! |

Notes: Add 2 tsp of Gypsum to water, based off starting with DC water.
The recipe released from the White House has an error, they mention 1.5 oz of Fuggle in the list of ingredients, but then only 0.5 oz in the instructions. I went with 1.5 oz here.
The instructions are also a little weird in terms of the boil times. They say 'add the honey and boil for 5 more minutes'. So, actually it is a 50 minute boil, not a 45 minute boil.
Other than that, it is a straight forward extract batch.
To get it to qualify as an Amber Ale, had to set the IBU equation to Rager, and the SRM equation to Daniels. I'm open to suggestions on the style (haven't tasted it). |
