Let temp drop to 66F on day 5. Gravity should be just above target on day 5, (1.008). Rack off primary yeast to secondary
for 3 days then bottle. Prime with Simplicity candi syrup at a rate of 32 grams/gallon. Ready in 6 weeks. |

Notes: This is Bell's Brewery Official Hazy IPA All Grain recipe from their store in Kalamazoo, MI.
This Hazy IPA is a double dry-hopped (a combination of Mosaic, Citra, Azacca, Amarillo and El Dorado) resulting in complex peach, stone fruit and tropical notes with a dry finish and balanced bitterness.
Note: This beer is dry hopped twice. The 1st dry hop is added at high krausen (Day 3 of fermentation), and the 2nd on Day 6 of fermentation. No need to transfer or remove the 1st dry hop before adding the 2nd. |

| Notes: Rangpur is a Tangerine-Lemon hybrid citrus fruit from India. This fruit can't be found in stores, I used it because I have a very prolific tree in my yard. Substitute any of your favorite citrus, or even a blend. Oranges, Grapefruits, Tangerines, Tangelos, anything works that tastes good to you. And yes, that is no typo, I used 180g, or 6.4oz of peeled zest. I used a potato peeler to harvest the zest. Zest the fruit on brew day for the best flavor. The earlier the better, it took me about half an hour to zest it all. |
