Notes: Agregue 8 ml de acido fosfórico al agua de macerado, antes de macerar *.
No adicione sales, no tengo análisis de agua.
Calenté el agua en la olla de hervor a 75° C... Recircule por placas y mande al mash. Quedo el agua en el mash en 73.4°C... espere que baje a 72°C y comencé el empaste.
El Ph quedo en 6.1... agregue 3 Ml mas de Fosfórico.
(* Ojo, no use toda el agua de lavado... tenia 40 litros...)
Mash: Inicio 6:15 / Temp 62 °C... tuve que mezclar y bajo un poco...
Inicio recirculado 6:45 (Temp 61 °C)
Densidad 1° mosto, 1076.
Agua de lavado, agregue 9 Ml de Fosfórico. pH last run 5.9
Resultado final cocción: DI 1047. pH 5.4
Inocule levas a 22.6 °C. Bajo rápido a 15.
A las 3 Hs se apago el combistato, subió a 18°C y volvió a bajar en 3 Hs Aprox.
- Dia 2: El bulbo del combistato se despego y marcaba 27 °C... Realmente estaba a 11°C. Si bien había actividad, veremos al final de la fermentación el resultado.
- Dia 3: Siguen los problemas... se rompió el bulbo del combistato... Subió unos grados la temp...
- Dia 5: Libere la temp hasta 18°C
- Dia 8: Comencé cold crush. Hoy bajo a 10°C
- Dia 9: Bajo a 1°C. La heladera no para de trabajar. Le meto CO2 desde ayer para compensar volumen de head space y no entre oxigeno.
Dia 13: Paso a Barril. Cosecho levas (Un desastre...)
Dia 15: Realmente mejoro la cerveza al bajar la carga de levas en suspensión. Ahora fría y con CO2, se va clarificando de a poco.
Dia 17: Sigue mejorando en aroma y sabor. La espuma es muy densa y consistente. De a poco se va clarificando. |
