This recipe will get you close to the original, but not the same. Too many differences in what they brew in Germany vs what we can get here. (Tettnang grown Hallertauer Mittelfruh - seen that lately - or a fresh pitch of krausen from a fermenting batch of Schonramer Hell - you get the picture.)
Note: I believe 'Tradition' Hops are Hallertau Tradition. (Carried at Yakima Valley Hops)
Pitch at 43 degrees in a sanitized bucket loosely covered with foil and allow the temp to rise to ferment temp at 49. Crash slowly and lager for 6-7 weeks. Take your time with this beer.
Start with RO water.

Notes: Temperatura iniziale di 53°C mescolare bene e fare una sosta di 20 min.
-Mescolare bene e mettere subito 1/3 del mash in una piccola pentola
-Scaldare lentamente fino a 72°C e fare una sosta di 20 min.
-Portare ad ebollizione e mantenere un bollore vivace per 15-30 min.
-Rimettere il mash bollente mescolando bene fino a che la temperatura arriva a 65-67°C e fare una pausa di 20 min.
-Prendere 1/4 del mash, bollire per 15-30 min.
-Rimettere tutto insieme per raggiungere la temperatura di 70-73°C e fare una sosta fino a saccarificazione avvenuta.
-Non si fa il mash out, ma si parte subito con lo sparging. |

Notes: - Heat 3 gal of strike water to 165F
- put grain bag into kettle to steep, maintain temps at 151-153 range for an hour.
- heat 5.75 gal of sparge water to 180
- (with help) slowly rinse grains in bag with hot sparge water, collecting roughly 6.75 gal of wort. (check BG, should be 1.034
- start boil, boil for 75 min and follow hop schedule on recipe. The whirlpool addition is when you are getting ready to chill the wort, add the last ounce of hops right at the end of the boil and just steep them in the wort while you chill.
- chill wort to 65-68F, check OG (should be roughly 1.046) and and pitch one packet of US-05 into fermentor and let ferment for 10 days.
- cold crash bucket in a fridge until below 50F so any yeast flocculates out
- check FG (should be around 1.008) and bottle. |

After a few months in the bottle this one changed and taste pretty good now. It has taken on more flavor and I would do the late addition and use maris otter extract next time |
