Add water to brew kettle to make it 3 gallons. Place 2 gallons of pasteurized, sorbate free, apple cider into primary fermenter. Add 3 gallons of wort to primary. Pitch yeast when cooled to room temperature. At this point, you can add 1/2 tsp per gallon of pectin enzyme to help with clarity. OG = 1.074 SG (after 3 weeks) = 1.030
