Notes: Add 30 grams of steeped Simcoe hops to each keg. Fill 2 Kegs with beer and set them in the Kegeratorator at a temperature of 50 ° F.
Drop 5 degrees per day to reach 35 ° F and rest for 24 hours.
Add Carbonation Ball Lock Lid Assembly, connect CO2 at 7 psi, and carbonate for 3 days at 35 °F.

Notes: 1. After Primary fermentation is complete add champagne yeast to bring down the final gravity to as close to 1.002 as possible.
2. Rack to secondary, add the Roeselare yeast for 6 months and add 2 oz. of oak cubes in a nylon bag, to be removed after 60 days.
3. After 6 months of aging, add 6 lbs. of sour cherry puree for an additional 2-6 months.
4. This can be used as the "aged" beer to be blended with a younger batch.
5. Package in 750 ml. bottles using dextrose tablets. May need the help of bottling yeast (CBC-1). |

Notes: KAYON AND BRAZIL ARE THE LAGER
KAYON FINE AND RWANDA ARE THE ALE
BG 1048 - 72% efficiency. This would bring beer out at 5.4%.
Thus have added 1.7L of boiling water.
Power cut - boil cut for 20 mins half way through
OG 1060. Seems high? Not sure why. Got 22L yield on the 25L (plus 1.7L) - maybe excessive boiling? ITS HIGH BECAUSE OF LACTOSE STUPID!
10L fermented in office at 15C with S23
10L fermented at flat at 18C with US05
LAGER YEAST (grey taped conditioning tank) accentuates down to 1.020. ABV = 5.25%. Does this include lactose?
ALE YEAST accentuates down to 1.014. ABV = 6%.
Why does ale yeast ferment further? Lager fermentation temp wasnt very stable
15g sugar per 4L
Cold Brew
60g per L. Soak for 15 hours
Mikeller says 50g per 500l. Thats 10g/L. Compared to 16.6g/L for Ancoats Coffee.
I think we did same amount of liquid as Mikeller, but lower concentration.

Consider using wyeast 1450 instead as Denny fav 50 tends to accentuate the malt character and mouthfeel. Also reported to have lower attenuation and produces very little esters, even when fermented warm, though I will aim to ferment colder.

Drinking notes:
WLP 036, it NEEDS to be lagered for at least 1 month, and do not stir up the gunk at the bottom of the keg/bottle. It's bitter, and weird tasting. A good combination would be gelatin and then a 1 month lager for extremely clear beer. Also, it is slightly too sweet and "sticky" for an oktoberfest beer. Adjust the grain bill to drop FG to something closer to 1.015 and use a LARGE starter to get this beer to ferment extremely clean. A better yeast would be a kolsch yeast, as it tastes cleaner. |

Notes: It's President's Day; a perfect holiday to brew on, especially since many of our founding fathers used to brew their own beer too. At one point, in early American history, brown ales were as popular as commercial lagers, like Budweiser, are today. I created and brewed this recipe this morning. It's is a solid Northern English style brown ale. The use of the brown and victory malts will contribute the nutty flavors and the use of 12 oz of honey and crystal malts will add subtle sweet flavors that will make this a very delicious beer.
