Notes: 6.1% base beer for the Saison.
6.7% base beer for the Dark Strong.
Split batch 4 ways:
1 x Saison 565 with 1 x tin prunes in syrup added in secondary
1 x Abbey Ale 530 with 1 x tin prunes in syrup added in secondary
1 x Abbey Ale 530 with 1 x tin figs in syrup added in secondary
1 x Abbey Ale 530 with 1 x tin prunes in syrup, 4g medium toast French oak chunks, and dregs of Cantillon added in secondary and AGED 1 YEAR
On brew day: Mash pH hit 5.4 as planned. Wort came out within 1 point of OG target. Got 19L of wort allowing for trub loss.
Wort smelled super strongly of liquorice toffee! Guess a combination of the caramunich, dark candi syrup and star anise.
Next time, for Original Sin Mk II, increase candi sugar, make base malt red X, lose caramunich, swap Munich for Vienna, make special b 3%. |

Notes: Aldi's 100% Apple Juice $15.50 for 5 gallons
Put 4.5 g Apple Juice in fermenter
Put approximately .5 gallon of the apple juice into the pot and turn it on medium high to warm it up (don’t boil it).
Once it’s warm, add the 2lb sugar and stir to dissolve, then remove the pot from the heat. Chill.
Add Yeast
Ferment 2 weeks at 63f
Thaw berries, add to fermenter
Ferment 1 week
Add 1/4t Potassium Metabisulfate
Wait 12 hours
Add 1/2t Potassium Sorbate
Let cider rest for 3 days
Pour apple juice concentrate to bottom of keg
Transfer cider on top of concentrate
Hook up the gas and cold crash for at least a week before serving |

A draft-only BrewDog bar exclusive; we have experimented with ageing our Vermount IPA for a short time in bourbon and rye barrels, both known for imparting flavour quickly compared to other types of barrel. Avoid any oxygen uptake! It will oxidise the delicate hop flavours during the ageing period. Purge your barrel/ageing vessel with CO2 and seal it airtight.

| Notes: 12/8/17- blended the two batches together as there was slightly different characters on both after they were blended with the last beer from the barrel and not my regular funky/spon/house strain. One was about 1.004 and the other closer to 1.010. I added 4 ounces of Tettnanger to one and 4 ounces of golding's to the other to see which character I liked best. Hopefully it will be ready to bottle in another month. |

1 quart jar with lid, sanitized
2 muslin sacks, or pantyhose
Ingredients
2 oz (57 g) of coffee ground to electric percolator (second from coarsest) setting on commercial coffee grinder
2 cups (473 mL) water
Procedure
Place ground coffee into the doubled muslin sack or pantyhose inside jar, then stretch around the outside of the jar.
Fill with 1.5 cups (354 mL) cold water and put lid on tightly.
Leave in the refrigerator for 24 hours. After 24 hours, open lid and lift out sack of coffee.
Pour out the remaining coffee toddy, leaving behind the dregs (last coffee bean bits) behind.
Add to secondary before transferring from your primary.
If you only have a primary, put the toddy in before bottling, or if you keg, the Cornelius keg upon transfer.
Important note: The ideal ratio of coffee to water is 1.0 oz (28 g) coffee to 8.0 fluid oz (237 ml) water. |
