Notes: Will be trying a bunch of yeast through this series. Cosmic Punch is a good one if you have the right hops. Trying to clear out the samples I got at HBC 2022 Pittsburgh, so there's some whole cone stuff and lupulin pellets. Not sure if it's really going to go, but will find out with Verdant and K97 co-pitched.
Also bought some Oast House Strata Extract and will add that at kegging. Recommendation was for 0.5 mL for 5 gallons at kegging.
The If you're wondering, the rye adds considerable body along with the spelt (wheat) and oats. It's pretty thick |

Notes: New method:
1.1 Mash as usual. I mash at 65c for an hour and sparge with 80c water.
1.2 Primary: Use Lallemand Philly Sour for fermentation.
1.3. Secondary 4-8 weeks: Add cloudberries that has been frozen and then pasteurised at 70c, then chilled.
1.4. Keg, drink & Enjoy
Old method:
2.1. Mash as usual. I mash at 65c for an hour and sparge with 80c water.
2.2. Let wort temp drop to around 40 - 45c.
2.3. Use actic or phosphoric acid to reach pH 4.5
2.4. Put wort in a clean and sanitised corny keg. Add lactobacillus.
2.5. Blow out any oxygen - important!
2.6. Keep for a couple of days and check pH. If possible, maintain 40-45c.
2.7. When pH is down to 3.6 - Add 5 liter water to be boiled away and boil as usual.
2.8. Goal is still 19 liters to fermentation.
2.9. Primary fermentation 1 week: add yeast and ferment as normal.
2.10. Secondary fermentation 4-8 weeks: Add cloudberries that has been frozen and then pasteurised at 70c, then chilled.

Notes: Final Gravity 1.005 Because mine finished so dry it actually has a biter bite. Pulled some out and added lactose to it, which made it taste fairly good. So will pull about a cup and a half of the beer, then mix with lactose to add back into the beer. Will see what will happen. Right now it is just to damn dry for me which gives it a bitter bite. My yeast highly over attenuated. Not really to sure how to solve this problem.
Ended up just putting it in the keg and charging it to 12.50, which gives it 2.3 col, Came out tasting great. |

Notes: I brewed this one a year ago and let it bottle condition for 6 months. It was a great late summer beer and people really liked it.
The nuts are toasted at 325 degrees then diced. Added to the wort last 15 min in a grain sack. An incredible amount of oil leaches from the nuts. Used 2.5 pounds of Crystal for head retention. When poured the beer is mid brown with a healthy and long lasting beige head. Plenty of lacing in the glass. |
