- Used 3 smack packs of Wyeast for each carrboy
- Hit 149.7 vs 152 target mash
- Hit 1.053 vs. 1.054 expected
- 9.75 gallons made it into 2 separate 6.5 gallon carboys. Expected 10 gallons.
- Chilled wort down to 46F before pitching yeast
- Started fermentation at 50F for day 1 (fermentation was noticeably going within 24 hours) and held for 12 days, then did 2 a day diacetyl rest at 55F
- Hit 1.008 vs. 1.013 target final gravity
- Started lagering and right away put chest freezer at 50F when wort was 55-56F, lowered to 47F next day, then brought down a few degrees a day until 33F and held for a total of 4 weeks lager schedule
DS 11.19 Edits: Lowered primary grains to 13 lbs pils, 4 lbs munich to hold OG down. Increased boil size to 13 gal to permit excess boil off. Adjusted water to include 5g each of gypsum and SoCl to increase hardness of water (balanced). Consider alternate yeast 2124.

| Notes: Standard Munich Dunkel style (but higher gravity than typical, thus the Doppel Dunkel or Double D), using WLP838 (Southern German Lager). I had planned to use WLP833, but forgot to order, so this will be done with 2 vials of WLP838 (with expiration date of Jan. 25, 2015; about 30d old). Will use nearly 15 lbs of Munich malt, rounded out with 5 lbs of German Pilsner, CaraMunich and Carafa II. These are all Weyermann malts. Also, will do protein rest for 20 minutes at about 122F, then 60 minute mash at 152-154. |

Have Krispy on hand. Wish I had Krispy 2.0 or Lutra.
Krispy @ 68ºF was good. I think Lutra would be as well. Going with semi-cold (60ºF) fermented 34/70 on second batch. Also fixed "leaf/whole" to pellet for initial bittering addition.
Went sulfate heavy (light and hoppy BFriend profile) and it was really drinkable, but almost too "drying" on the palate in the finish. Going to try a balanced profile as I want a little of that rather than shift straight to a chloride heavy profile.
Balanced profile seemed better than sulfate heavy so sticking with that. Still quaffable, but less drying on the palate. Reducing the grain to 11 from 12 lbs to reduce the strength a bit. Want to be able to have a couple. |

Notes:
Recipe was for 5g @ 70% efficiency for a much higher ABV. When scaled water for 5.5 @ Fermenter & 60% efficiency, hit the target (low 6%) ABV for base beer. However, the Donuts added quite a bit of Gravity.
Hops: Reduced hops by 20% to adjust for the affects of not aging.
Coffee: Changed the coffee addition to a secondary process of whole bean.
Donuts: Added Donuts to the recipe. Target 0.5# in Mash & 0.5# in Boil. Donuts will add more sugar and bump up ABV.
Vanilla: Added Vanilla to the recipe. On brew day, create Vanilla tincture (1 Vanilla Bean, cut & scrapped with husk cut up, in a jar with 2 tbsp of Vodka). Pour into secondary.
Ferment for 2 weeks.
2 days later, Cool to sub-40 (or as close as you can get). Pour in Vanilla tincture & add 5 oz of whole coffee beans (in a hop sack) to 5 gallons of beer for 1-3 days (to taste). |

Notes: Boil for 20 mins before first hop addition to get a good hot break.
Save about a liter of the original green beer when transferring to fermenter for use as gyle at the priming stage. Freeze until bottling day.
Transfer to secondary seven days after fermentation cools off and dry hop after 5 days....let hops sit for 5 days then cold crash for a day then bottle. |
