6.5 gallon wort kettle soured for 48 hr w/ ~1.2 L of OYL-605 starter.
12 oz Silver Anejo tequila (Jose) that was aged on oak for ~3 months was added to the zest of 5 large limes. Strain and add to keg when racking. Adds ~0.5% ABV.
BOIL: 20JAN18
6.5 gallon wort collected (left behind a bit of trub) and boiled for 20 min. At 15 min, added cracked coriander, pink Himalayan sea salt, whirlfloc and yeast nutrient.
Pre-boil pH = 3.18, post-boil pH = 3.13
SG taken after kettle souring, SG = 1.038
Rehydrate 1 packet of US-05, oxygenate for 60 sec and ferment at 68F. |

| Notes: Mashed as normal, then boiled for 10 minutes and then cooled to 40C and removed chiller. Added a Yakult, mostly cover with cling film and spray surface of beer with CO2 using pressure barrel lid and 2 chargers then seal cling film. Soured for 36 hours or until 3.0-3.3pH ish. Boil again and hop as norm. Yeast starter made from wyeast 1318 and dregs from Brewdog vs Clouderwater NEIPA v2 and Cloudwater/Verdant/L&G Loral and Ardi. Dry hopped on third day of primary for 4 days, again in secondary for another 3 days then cold crashed and bottled. |

Notes: Original recipe OG target = 1.07. Efficiency problems put me down to 1.06. Low efficiency coupled with very poor attenuation results in an ABV of 5.3% instead of the expected 7.3%.
Does not appear to fit any style. gravity sample was extremely hoppy, as could be expected. Hoping it carbs up to be at least drinkable. |
