Pitched Wyeast 1318 London Ale III Slurry (5 G), and WLP025 Southwold (10 G)
Was done as a concentrated boil (13 Gallons) and diluted to strength.
Plan is currently that we will secondary the beers on top of oak for 3 weeks. The 1318 Batch by Rich will be racked onto French Oak Beans soaked in Scotch Ruby Port and Vodka. The WLP025 Batch by Drew will be racked onto Oregon Oak Beans soaked in Sherry and Vodka. The soaking process protects against infection and adds character to the beer. |

Notes: 1tsp Irish Moss added 15 minutes before end of boil
Started burco boiler while still running the second batch sparge through, saved significant amount of brew time.
Whirlpool utilisation of 5% used for IBU calculation.
When wort hits 95 degrees Centigrade, add hops and stir to generate whirlpool and put lid on.
Leave for 10 minutes, stir again, leave for another 10 minutes and then turn on wort chiller.
Started 20.7 litres at 1056 aiming for 1010 target.
Checked sg on day 8 and measured 20.7 litres at 1016 so restirred yeast cake and increased fermenting temperature by 1 degree

Notes: The grain bill is too big for starting at 5 gallons. Try starting with 6 gallons and sparge to 6.5 gallons. Buy PB2 on Amazon. Bottle is 16oz... maybe just use the whole thing instead of measuring 13?
Put the PB2 and Cocoa at the bottom of the secondary and siphon on top of it.

| Notes: Brewed 5/25/15. Strike water was 169F and we hit about 152F with that. Recirculated one gallon and hit 151F. Mash pH was 5.1 which is way lower than calculated. Probably could have left out the acid malt. Sparged to 8.5gal on the nose. Kettle runnings were 1.050 which is 83% efficiency. Prolly good I bumped it down to 65% overall. Ending result was about 5.37 in the fermenter when all was said and done. Efficiency was actually higher than I thought it would be which is good. Pitching temp was about 70F which is a bit high so I cooled it down to 67F. 5/26 morning it was still sitting at 67F and I dropped in an ice pack evening time it was sitting at 67F. 5/27 morning it was sitting at 67F and I dropped an ice pack in. By evening it was still sitting at 67F. Dry hopped 6/11 and took a gravity reading. |
