Notes: Either use decoction to raise temp for each rest, or use water infusion to bring it up to temp. Another option is to direct fire the kettle with the mash inside.
Key is to produce an intensely dry beer. Using single decoction mash, or to do 3 small decoctions.
*Preheat tun with strike water for 5 mins with over heated water*- just add water that is 4f above target strike temp and wait for it to reach strike temp then add grains.*

target og is 1.057-1.060 and target fg is under 1.010
compensate for temperature loss and no sparge - efficiency is 70% instead of 74%.
mash proceedure: - 10.77 pounds excluding sugar.
Strike for 145F, after 25 mins, draw a decoction of desired amount + 10 percent more for boil off during 15 minute mini decoction boils.

1.7 quarts for step to 150f () - predicting 2f loss
2.0 quarts for step to 155f () - predicting 1f loss
2.4 quarts for step to 160f () - predicting 1f loss
Keep boiling water on hand to raise temp if needed.

Notes: Gather enough wort until you have approx 7 gal of wort. Boil for 90 minutes. Cool as close to 46 degrees as possible. Ferment at 48 degrees until terminal gravity is close to being reached and then raise fermenter temp to 60 degrees for Diacetyl rest. Keg and lager at 33-35 deg for 8-12 weeks.
Took 1st place for European Dark Lager at 2016 Sowers Cup
This beer was lighter than a typical Dunkel even though the malt flavor was great. Darkened with 1oz of Sinimar at the end of the boil but you can do the same thing with some cold pre-steeped debittered Black malt as well. |

Notes: Steep grains in 4.5 cups water 40 minutes @152 degrees. "Sparge" in colander with 3.5 cups water @~168 degrees.
Add DME plus 8 cups water for hop boil. Add LME at around 2 minutes and bring entire wort back to boil before flame out.
Use 2 hop sacks. Boil additions go in first bag. Aroma/Flameout hops in second bag to leave in fermenter.
Ice bath to cool wort.
Add to fermenter on top of 1 gallon of cold water. Top up to 2.5 with cold water.
Pitch 5.5 grams of yeast at 65 if possible.
Ferment at 68-70 wort temp or lower if possible.
Iced during cold crash. Clearing? Added harvested yeast to priming bucket.
One week tasting shows great flavor, maybe slight oxidation. |
