you can brew this just like the recipe and get a good high alcohol bitter IIpa or can cut it down a bit by omitting the corn sugar and change the 90 bitters to 60 reducing the bitterness a bunch, either way its fantastic. Dry hopping goes as follows first batch for 5 to 7 days then pull out and add the second batch for 4 to 5 days, I dry hop the second batch in my keg in a bag under co2, at the end of dry hopping I cold crash in the freezer to drop all particles to the bottom then pull the finished beer off the top and carbonate, you will love this beer
if you cant get WLP007 just use nottingham, works great at 60f for this beer |

| Notes: dry hopped for four with one ounce of Motueka into 1/3 of the keg (the initial dry hopping had fallen out) and bottled for competition. Judges notes were that the balance was too bitter and to increase the malt. I would probably lower the 60 minute additions if brewed again to provide focus to the flavour and nose. |

Notes: Base recipe inspired by Goose Island Bourbon Stout.
Note that with such large grain volumes, I had to use my 20 gallon equipment - too little headspace for my 10 gallon gear. Achieving proper final gravity requires extracting a very large volume (11 gallons) and boiling down to product 5.5 gallons at high gravity. This takes about 3 hours, but monitor gravity and remaining volume to determine end point.
Dough in with cold water, add 170F water (to reach 36 qts water added - 1.25 qt/lb rate), check temp and apply heat (if needed) to reach sach temp of 153F. Mash for 60 min or until iodine starch test indicates conversion complete. Mash out at 167F. Acidify sparge water, sparge to yield 11 gallons. Initial runnings 1.082, final runnings 1.040.
Boil for 3 hours, adding boiling hops and chalk/gypsum water agents. At 15 min to end of boil, add irish moss and insert chiller to boil kettle to sanitize. At 10 min, add finishing hops.
Chill, aerate and pitch yeast. Note that a large starter is required due to high OG. In this case, was pitched onto yeast from primary of previous batch. Due to the high gravity, I split this into two carboys as it was blowing off a lot of foam otherwise.
After 2 weeks, transfer to secondary, add oak spirals soaked in bourbon. After 2 more weeks, transfer to oak bourbon barrel, age for 9 months. Transfer back to carboy prior to bottling/kegging. |

Notes:
BIAB Mash:
MASH: Heat 14 qts to 152F. Add grains to stabilize at 148F. Mash until pre boil gravity reached. Add heat to keep above 145F.
Pre Boil Gravity should be about 1.031.
BOIL:
Only up to a boil to sanitize, no hops.
Chill to 95F with ice.
LACTO PITCH:
Once down to 93F or so, acidify to 4.5 with Lactic Acid.
Pitch 1 Lacto Goodbelly.
Lay plastic wrap down on surface and flood with CO2 and lid.
Place in Garage (summer) for 2 days. Check pH after 24 hrs, then 48hrs, should be at pH 3.25 by then.
BOIL THE WORT AGAIN:
Remove plastic wrap and bring kettle to a boil once pH of 3.25 attained.
Add hops and boil 15 min.
Cool in ice bath.
PITCH:
Cool to 65F and transfer to fermenter.
Pitch 1 pack rehydrated US05 using GoFerm. After 4 days let rise outside chamber to whatever.
FRUIT: Once FG stabilizes rack into secondary & add fruit: 0.75-1.0 lbs/gal of passion fruit pulp.
Let go 1 -2 weeks at about 70F.
KEG IT UP!

Notes: After mash, top up brewpot to 3 gallons and boil, add malts and begin hop schedule. Boil volume is 3.5 gallons.
Wort chill, transfer to primary, top up to 5.5 gallons, pitch yeast, and ferment for 7 days, or until fermentation slows. Transfer to secondary and leave until fermentation stops. Add Gelatin 3 days prior to bottling and cold crash in refrigerator (really clears up the beer).
Bottle and condition at room temp for 21 days.
