Notes: Method:
Make lactobacillus starter. Dissolve malt and water, add lactic acid. Kettle sour with lactobacillus, then boil with just a touch of bittering hops. Ferment with US-05. Split and add raspberries, blackberries, passionfruit to some volumes.
Yeasts:
White Labs 677 Lactobacillus delbrueckii (make a ~2 L starter with DME and yeast nutrient)
(or Wyeast L5223-PC Lactobacillus brevis)
(or WLP672 Lactobacillus Brevis)
"The Lactobacillus Delbrekii that you can buy from the beer yeast companies is homofermentative, and Meyer feels this is less good than heterofermentative species like Lactobacillus Brevis, which is common on malted barley from the malting process itself."
But it seems whitelabs themselves think delbrekii is more suited. But people disagree! ugh.
Aim for 3.5 volumes CO2.

you can brew this just like the recipe and get a good high alcohol bitter IIpa or can cut it down a bit by omitting the corn sugar and change the 90 bitters to 60 reducing the bitterness a bunch, either way its fantastic. Dry hopping goes as follows first batch for 5 to 7 days then pull out and add the second batch for 4 to 5 days, I dry hop the second batch in my keg in a bag under co2, at the end of dry hopping I cold crash in the freezer to drop all particles to the bottom then pull the finished beer off the top and carbonate, you will love this beer
if you cant get WLP007 just use nottingham, works great at 60f for this beer |

Notes: Fell for the hype on Northern Brewer's website about "rare" South African hops. So I bought an 8oz bag of the best sounding one, African Queen.
Use 2nd gen 2017 WY1272 culture. Typical IPA water chemistry and mash schedule.
Brewed 6/11/17, stats as noted. Tweaked hop schedule to include FWH. Overshot mash temp to 156F. Discovered thermometer on pot is reading 4deg lower than old thermometer. Made "vitality starter" with 1L of wort taken after boiling batch for 10min, after FWH charge, before 60m charge. Used small mason jar of 2nd gen 1272; starter was krausening by the time I pitched it.
I was a bit underwhelmed by the aroma of the AQ hops. They are very similar in earthy, danky aroma to CTZ, so they should play well. There was a faint fruitiness in the aroma which must be the gooseberry as the descriptors indicate. Hydro sample didn't have much of hop flavor, and I can already tell the bitterness will come across as half or less of what the calc'd IBUs indicate. We'll see how well the hops carry through after dry hopping.
Update: kegged carbed and on tap as of 7/6/17. Its not bad. Ended up as a kind of generic IPA/PA. There is a firm, danky bitterness that balances the malt bill really well. If I concentrate, I can pick up a very subtle fruitiness that must be those gooseberries the packaging indicated. I really like the malt backbone on this one. The 1/2lb of crystal wheat was a very nice addition that brings a creamy subtle sweetness and some character and color to an otherwise generic malt bill. For whatever reason, this beer pairs exceptionally well with a fine cigar, particularly Macanudo Cafe series.
Overall this wasn't a bad beer. I think I just had higher expectations over the hyped up hops. I believe it would grade out well as a typical copper colored American IPA. I'll continue to enjoy it with the occasional cigar, and try to do a better job coaxing the flavors out of the remaining 3oz of African Queen hops I have in another IPA recipe with a few other varieties. I'm thinking Pac. Jade and Simcoe would be a good start. |
