Notes: - Mash and top up water to 6 gallons
- Bring wort to a boil for 5 minutes
- Test acidity to ensure it's under pH of 5, add lactic acid if needed
- Cool wort to 100°F, pitch lacto
- Wrap a heating pad or blanket around the kettle to keep it near 100°F
- When pH is under 3.4 or it tastes good, put the kettle back on the burner and start to boil
- Boil 30 minutes, cool, pitch Weizen yeast
- Put frozen raspberries in a small pot with 8 oz of table sugar
- Heat to 150°F, mix and smash the berries
- Cool mixture and add to fermentor |

Notes: Mash grains in grain bag @ 155F for 45 minutes. 10 minutes before end of mash, add 1 gallon hot water. Sparge with remaining 2 gallons of hot water. Let grain bag drip and discard.
Bring to a boil and let boil for 90 minutes. At 75 minutes, add 0.5 oz Amarillo Hops. At 80 minutes, add yeast nutrient.
At 90 minutes, quickly chill to 80F and pour 4 gallons apple juice into racking bucket. Pour in wort and stir well. Siphon wort juice mixture into carboy. Add 1 vial English Cider Yeast and seal.
Let ferment in primary for 2 weeks, then keg or bottle. |

Notes: Method:
Make lactobacillus starter. Dissolve malt and water, add lactic acid. Kettle sour with lactobacillus, then boil with just a touch of bittering hops. Ferment with US-05. Split and add raspberries, blackberries, passionfruit to some volumes.
Yeasts:
White Labs 677 Lactobacillus delbrueckii (make a ~2 L starter with DME and yeast nutrient)
(or Wyeast L5223-PC Lactobacillus brevis)
(or WLP672 Lactobacillus Brevis)
"The Lactobacillus Delbrekii that you can buy from the beer yeast companies is homofermentative, and Meyer feels this is less good than heterofermentative species like Lactobacillus Brevis, which is common on malted barley from the malting process itself."
But it seems whitelabs themselves think delbrekii is more suited. But people disagree! ugh.
Aim for 3.5 volumes CO2.

Aim for ~15 IBU (or ~10 if the sourness is decent). Not sure I need a 60 minute boil. Pitch wyeast smack pack directly with a spoon of 3711 to help. |
