- Mash vol.: 32.5 L, Pre-boil vol.: L, Batch vol.: 23 L
- US-05 (2x yeast packs dry pitched)
OG: 1079 (Refract.) 10 (Tilt)
21/5/23: SG: 1020
25/5/23: SG: 1018, added 175g whole beans (see photos) Brazilian from Evolve, 2 bourbon soaked split vanilla beans straight into fermenter and cold crashed to 10 C.
28/5/23: Cold crashed to 1 C.

30/5/23: Kegged and carbed.
Batch # 2 - 1/8/21 (Eff.: 60%, Att.: %, ABV: %)
- Mash vol.: 32.5 L, Pre-boil vol.: 27 L, Batch vol.: 21 L
- US-05 (2x yeast packs dry pitched)
OG: 1082 (Refract.) 10 (Tilt)
Volume at boil was 27 rather than expected 28 L.
Dark grains not cold steeped for this batch, added late to the mash instead.
2/8/21 - SG: 1079
6/8/21 - SG: 1024
7/8/21 - SG: 1018 ferm temp upped slowly to 20 C.

Notes: Special Brewing Instructions:
1. At start of boil, put dried lingonberries in the blender and cover with wort from the kettle. Puree, cool, and add the pectic enzyme. Refrigerate for one 1 day. Add this mix to the fermenter on day two of fermentation.
2. After 30 minutes of the boil, remove two cups of wort to a smaller pot. Heat the wort to keep it hot, but do not boil it. Add the yarrow, meadowsweet, and birch syrup. Steep this mix until the end of the boil, then strain it into to the kettle.
3. Add the cranberry concentrate and honey immediately after flame-out (end of boil).
Residue of this gruit was recovered from the grave of the Egtved Girl, and was reproduced as "Kvasir" by Dr. Pat McGovern and Dogfish Head Craft Brewery in 2013. This is what the Danes drank before they were Danes, over two thousand years before they were even Vikings, in a time before Christ or Odin, when they worshiped the sun. Brew it and think of her, a young woman with short blond hair and a braided skirt, who died in ca. 1370 BC.

Notes: Firestone Walker Union Jack IPA. In their own words…”An aggressively hopped West Coast-style IPA. Union Jack showcases exceptional dry hop character with stunning pineapple, citrus and piney aromas on the nose accompanied by honey-like malt aromatics. Double dry hopping brings bold grapefruit, tangerine and citrus flavors that are contrasted by pale malt sweetness to balance this intense brew. A true tribute to the style that put the West Coast on the craft beer map.” I was able to collect the following recipe details from their website http://www.firestonebeer.com/beers/products/union-jack 1.060 Original Gravity; 7.5% ABV; 70 IBUs; Light Amber Color (8 SRM)
Dry Hop Schedule
After about 1 week in the primary, transfer to a secondary and dry hop with 1 oz Amarillo, 1 oz Cascade, and 1 oz Centennial.
After about 1 week in the secondary, transfer to a third vessel and dry hop with 1 oz Citra, 1 oz Chinook, and 1 oz Simco.
Carbonate to ~2.5 volumes of CO2 (moderate-high) and enjoy! |

Notes: Collect 128 ounces of first runnings, boil down to about 16 ounces to caramelize, and add to brew pot. (This is reduced less than called for in original recipe, which would be about 8 ounces for this size batch.)
Skotrat uses Northern Brewer hops, but according to the Traquair House site East Kent Goldings are used. I've used both, either is fine.
Traquair House uses isinglass instead of Irish moss.
