Not sure I can brew this in time for Christmas, nor of how potent the spices are, so I'm starting small and recording it in case I need it. If they are too weak at gravity testing time, make a tincture by floating the spices in individual alcohol (vodka/bourbon/whisky) bowls for 24+ hours, strain them out and add the tincture at bottling time to taste. Starting with Masterfoods ground cinnamon, Masterfoods ground nutmeg and Queen natural vanilla extract. Will consider using Hoyts cinnamon sticks if using a tincture. If the weather is hot, switching yeast to S-04 to allow it to go up to 25C during fermentation without dying is the backup plan. --- I resorted to using a tincture soaked in bourbon for 24 hours to bring out more spice flavours. They're still reasonably subtle. Same amounts as in the recipe, plus the same amount of lactose as well. Just do them at bottling time. Flavour was a bit too roasty, despite me trying not to pick roasty dark malts. Reduce one of the two.
