Notes: Romeo Brewery 柚子処理マニュアル (10kg分)
1. 発酵終了(比重安定確認):温度はまだ**20℃**前後のまま。
2. 皮投入:消毒した皮をネットに入れて吊るす。
3. 漬け込み(3日間):20℃前後でキープ。香りを出し切る。
4. 冷却開始:皮を取り出してから、0℃〜2℃へ急冷(コールドクラッシュ)。
5. 果汁投入:ビールが十分に冷え、酵母が沈殿した後に、消毒済みの果汁を静かに入れる。
■ 事前準備
- タイミング: 発酵終了の1〜2日前
- 機材: DBKシトラスジューサー、真空パック機、鍋、温度計、2Lペットボトル(耐熱ではない場合、冷却用容器が必要)
■ 1. 皮 (Yellow Zest) の処理
- 洗浄: 流水とタワシで表面を洗う(ワックスが気になる場合のみ食器用洗剤を使用し、完全に洗い流す)。
- 剥皮: ピーラーで黄色い部分のみを剥く。白いワタは徹底して避ける。
- 冷凍 (重要): 剥いた皮を真空パックし、**一晩以上「冷凍」**する。(※細胞を破壊し、香りの出を良くするため冷蔵は不可)
## 殺菌 & 投入:
- ビール冷却後(熟成工程)、冷凍した皮を取り出す。
- 鍋に湯を沸かし、火を止めて**65℃〜70℃のお湯に「サッとくぐらせる(30秒〜1分)」**程度にする。
- すぐに湯切りし、消毒済みのネットに入れてタンクへ吊るす。(3日間漬け込み)
※1時間の加熱は厳禁。どうしても菌が怖い場合は、ホワイトリカー(35度以上)に10分浸す方法へ切り替えること。
■ 2. 果汁 (Juice) の処理
- 加温: 皮を剥いた果実をレンジで人肌程度に温める(搾汁率向上)。
- 搾汁: DBKシトラスジューサーで搾る。種とワタの破片が入らないよう注意。
- 濾過: ザルで粗い固形物を取り除く。
## 殺菌 (Pasteurization):
- 搾った果汁をステンレス鍋または耐熱容器に入れる。
- 湯煎または直火(弱火)で65℃まで上げ、30分間キープする。
※70℃を超えないように注意。1時間は不要。
## 保管・投入:
- 急冷し、消毒済みの容器(2L PET等)に移して冷蔵/冷凍保管。
- ビール冷却後、タンクへ静かに投入(2L分)。 |

2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gal recipe you will need extra because of the fluid loss during the boil process
1lb Caramel 10 Grain
1lb Rahr 2 Row Grain
.5lbs Carapils Grain
.5lbs Carahell Grain
6bs Golden LME
3oz Horizon Hops
4oz Centennial Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME, and return wort to boil for 30 minutes
Add 2oz Centennial hops and boil for 30minutes
Add 1oz Centennial hops and 1oz Horizon hops and boil for 10 minutes
Add 1oz Centennial hops and 2oz Horizon hops and boil for 5 minutes
Remove pot and enough bottled water to bring the specific gravity to 1.055
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 5-6 days
Reduce CO2 to 5 - 7psi, pour and enjoy
