Initially wanted to run a version of Black Hops' Eggnog Stout, but eventually have turned it into a spiced milk stout for a similar Christmas feeling.

Not sure I can brew this in time for Christmas, nor of how potent the spices are, so I'm starting small and recording it in case I need it. If they are too weak at gravity testing time, make a tincture by floating the spices in individual alcohol (vodka/bourbon/whisky) bowls for 24+ hours, strain them out and add the tincture at bottling time to taste.

Starting with Masterfoods ground cinnamon, Masterfoods ground nutmeg and Queen natural vanilla extract. Will consider using Hoyts cinnamon sticks if using a tincture.

If the weather is hot, switching yeast to S-04 to allow it to go up to 25C during fermentation without dying is the backup plan.
