Add lactose with 10 min left in the boil.
I crushed the nibs a little with a cooking mallet in a plastic baggie (you could use a rolling pin), and then I put them in a pot. I just used enough water to cover the nibs. I boiled the nibs in the water for about a minute and a half. I then poured the nibs and entire contents into the fermenter (there is a good soupy extract that's made when boiled and you want to use that also) and I let it sit in the fermenter for two weeks.

Notes: Inspired by Rodenbach Grand Cru, New Belgium La Folie and Love, plus Pizza Port Le Woody. Formulated with help from professional brewers in America and Belgium that have experience with this style, this is another acid ale.
Step by Step:
Step mash with a rest at 122 °F (55 °C) for 20 minutes, a rest at 145 °F (63 °C) for 40 minutes and a saccrification rest at 162 °F (72 °C) for 40 minutes. Sparge with 168 °F (76 °C) water for an hour. Boil wort for 90 minutes, adding hops for final 60 minutes of boil.
Pitch the yeast and bacteria pack straight into the cooled wort (no starter). Ferment in a plastic bucket for 27 days at 70 °F (21 °C), then transfer to another plastic bucket and condition beer at 70 °F (21 °C) for 5.5 months. Keg beer. |

Notes: This beer was part of an experiment put on by the Jordan Brew Club (Jordan, MN). We all started off with the same malt base/hops, but then were challenged to make a change in order to make the beer unique.
The original recipe called for Citra/Galaxy/Mosaic in a boil/whirlpool/dry hop schedule. I decided to change the hops over to El Dorado & Lemon Drop in a similar schedule. The two complimented each other pretty well, with the El Dorado having a bit of earthy funk to offset the bright lemony Lemon Drop.
I initially used the default Whirlpool hop attenuation settings of Brewer's Friend (10%), which gave me a 90+IBUs. After tasting the brew, I knew that setting was off, and spoke to a couple of professional brewers, who told me to adjust the attenuation to about 3%, which gave 46 IBU...much more accurate to what I was tasting in this beer. |

Notes: Due to the chocolate added at the end of the boil, make sure to top up the
batch volume to 5.25 gallons, as there will be quite a loss to trub in the
fermenter. The first addition of coffee is in the boil, and the grounds can be
loosely bagged in a hops bag and added at flame out, to steep in the wort. It
is recommended to do a secondary fermentation on this beer, to get it off of
the trub and coffee grounds, and it can be racked onto the second coffee
addition (cold brewed). The second coffee addition is 2 ounces of coarsely
ground coffee, brewed with 12 ounces of water, cold brewed and added at
secondary fermentation. If not doing a secondary, the second coffee addition
can be added at bottling time. Due to the high starting gravity of this beer,
we recommend purchasing two packages of yeast or to make a yeast
starter. Aerate the cooled wort thoroughly, to ensure a healthy
fermentation. |

Notes: This is hands down the best IPA I have ever tasted. The fragrence hits you in the face like a birthday cake! The first sip across the pallet brings out a smooth crisp semi-sweet light bodied ale followed by a delicous blend of grapefruit and passion fruit notes and then ends with a light kick in the teeth of bitterness. Perfectly ballenced. I have brewed this three times and the last two times were by request. Enjoy
The OG was slightly high coming in at 1.070 which is what I was counting on to drop the IBUs just a bit. First taste right on course for an amazing trilogy.
Wow. The Mosaic Hops add a new Element to this IPA. Delicous Grapefruit flavers with all the bitterness of big IPA. |
