Courtesy of Ozark Beer cofounders Andy Coates and Lacie Bray, here is a homebrew-scale recipe for their BDCS—a bourbon barrel–aged double cream stout meant for months of wood-aging to balance and soften its profile.
Mill grains and mash at 154°F (68°C) for 60 minutes.
Vorlauf until the runnings are clear of particles, then switch on the burner and run off into the kettle. Sparge at 170°F (77°C), topping up as necessary to get about 7 gallons (26.5 liters) of wort—or more, depending on your evaporation rate.
(If dividing the grist to conduct two mashes, begin boiling the first batch while mashing the second.) Boil for about 2 hours—or longer if necessary to get near the target starting gravity—adding hops and lactose according to the schedule.
After the boil, chill to 66°F (19°C), aerate well, and add plenty of healthy yeast. Ferment at 68°F (20°C) until fermentation is complete and gravity has stabilized.
Rack the beer into a bourbon barrel—or a sanitized fermentor with about 3 oz (85 g) of bourbon-soaked oak cubes—and age patiently. |

Notes: Divide the grain into two equal parts and load one half into the mash tun. Mash in 1.5 qt/lb for a mash temp of 152F. Mash for one hour. Recirculate until wort runs clear and run off the wort. Sparge with just enough hot water to collect 4 gallons of wort.
Heat the wort back up to strike temperature. While that is happening, clean out the mash tun and add the remaining half of the grist. Repeat the mashing procedure and sparge to collect 6 gallons of wort. |

Notes: Target 20AAU for the 90min HopShot addition, so if you can't find any hop extract, just add the appropriate amount of a clean bittering hop. (e.g. 1.18oz of Warrior @ 17% AA)
I am choosing to hold the hopstand/whirlpool hops for double the time, when the wort reaches 160 F, which is below the point of isomerization. This way, more of the aromatic hop compounds are retained and not boiled/driven off.
Lab tested IBUs will be lower than the recipe target IBUs, e.g. 88 vs. 140.
Dryhop is split into two, four day schedules. Add 1.5 oz. of each Nelson Sauvin & Galaxy, then remove four days later and repeat with another 1.5 oz. of each hop for another 4 days.
WLP001 or WLP090 is reported to make a very similar beer, which was preferred by the brewer to WLP007 due to better attenuation.
Start fermenation 62-64 F for 8 days, then nudge it up to 68 F for another 8 days, including dryhop.
Clear beer with gelatin to finish.
Carb to 2.4vol or so. |

Notes: Porridge is oat and milk, so this is both a sweet and milk stout. I've balanced the sweetness with a high alcohol content to give the impression of bitterness without actually taking from the sweetness. Tempered with aroma hops, this is an unusual Irish stout, usually associated with dry astringency. A great option for those who can't quite take to Guinness. |

I added 100g of dextrose at the end of the boil to ensure I hit the post boil target OG of 1.036.
Kettle sour method.
1. Mash and boil with NO hops
2. Cool to 35 degrees
3. Add Lacto
4. Wait until desired sourness is reached (check every 12 hours)
5. Add a little bit of sugar to bring it back to expected pre-boil OG
6. Boil again and add hops
7. Cool back down, pitch yeast and ferment as normal with yeast

Notes: Fermented for 2 weeks and 4 days. The kveik yeast fermented it fast, probably not necessary to keep it for as long as that.
Copper/red colour. Light fruit character, dry fruit such as apple. This was benefited by the fact that the beer underwent primary fermentation in consistent 80-90 degree Fahrenheit temperature range. Not overpowering though. Bitter aftertaste, not hoppy.
Hope to try with different strains of British yeast; if it is more successful, then the recipe will be updated. |
