NOTE: we did have some trouble with the Glycol and the temperature so this beer fermented warmer for longer, which I guess is appropriate for a steam beer. |

| Notes: A stout that will definitely keep you warm in the winter. This beer hit 10% ABV. I pitched 2 pouches of Wyeast 1056 the second after initial fermentation slowed. The wort puckered your mouth with acidity like I had never tasted in a beer. I worried that it wouldn’t mellow, but it did. Final taste notes are chocolate and coffee with a warming alcohol presents. Hops balance out nicely with the high alcohol and large grain bill and seem to complement the malts perfectly. Cheers to long rainy NW winters. |

Notes: 60 minute boil would be fine, I doubt 90 mins is necessary.
I added 100g of dextrose at the end of the boil to ensure I hit the post boil target OG of 1.036.
Kettle sour method.
1. Mash and boil with NO hops
2. Cool to 35 degrees
3. Add Lacto
4. Wait until desired sourness is reached (check every 12 hours)
5. Add a little bit of sugar to bring it back to expected pre-boil OG
6. Boil again and add hops
7. Cool back down, pitch yeast and ferment as normal with yeast
