Notes: Pre-prohibition lager style.
-Golden color, thick, creamy head; full flavor, modest maltiness, subtle sweetness of the corn; balanced hop bitterness; clean bitter finish from the cluster hops.
-Great attenuation, no esters. Very clean and crisp.
-Crystal clear, sparkling.
-Hallertau tradition or Liberty can be substituted for the stryian hops.
- Lager for 6 weeks. This yeast is very powdery but it will clear brilliantly given a good lagering time. Really good drinking beer.
-Any BMC fan will enjoy this.
Trying JY330 - Dutch Lager yeast from Jasper Labs. (Heineken yeast?) Outcome TBD.

This base beer great by itself but lends itself well to flavoring after fermentation.
Examples:
6 oz of Apple flavoring (1.5 bottles of Brewer's Best)
8 oz of Blueberry flavoring (2 bottles of Brewers best)
1 unsweetened packet of powdered lemonade for a shandy.

Notes: This recipe combines elements of both versions of Brew Dog's Punk IPA. Hop profile of original, plus cara malt as per the current version.
The original lists only extra pale malt, but SRM of 8.5. That seems impossible, so there must be some cara malt or else a lower SRM.
Need to manipulate the hop amounts some more to account for AA differences (and inventory). |

The average 5 gallon beer recipe requires 1 ounce of Coriander seeds which is about a hand full. Grind them up with a coffee grinder or crush them with a mortal and pestle ( hammer and napkin) just before use. They should be placed in a hop bag and added to the boil when 15 minutes or less remain, check out Brewing the Beer for more info on when to add. I would not recommend adding coriander into the fermenter, I have heard stories of it completely destroying beer by giving it an overwhelming amount of coriander flavor. |

Target mash was 147F for 60 minutes but ended up mashing 152 for 60 minutes instead. Also missed my sparge temp, using 2 gallons at 171 instead of 174.
Something seemed off because OG was measured at "10" on a friend's refractometer (I'd never used one before but it was right on the "10" mark, which according to a website calculator, is 1.040) -- missing my target OG of 1.051 by 0.011. Not sure what went wrong, I'd like to repeat a smaller batch and see how it goes.
Tried a sample of the wort before adding yeast and it seems very aligned with the BJCP style guidelines as long as my fermentation temperatures can be maintained, it should be quite drinkable. |
