No adjustment here, just treat with half a campden tablet to remove chlorine and that's it.
##Malt
Mill the base malt and add the oats. Mill all the other grains separately. Start the mash with the base malt and oats and add the dark grains when the mash has been completed. The de-husked dark grains should give a smooth flavour to the roasted notes.
##Hops
Target hops used for bittering and some Fuggle used towards the end of the boil.
##Yeast
London Ale I (WYeast 1028) used for this beer for a dry finish. |

Using Amber malt because Biscuit is not available and Victory is 3x as expensive.
Using a smaller percentage of regular Chocolate malt because I didn't have Pale Chocolate (would have done about 8% of the latter).
My Warrior hops said only 15.2%AA (default was 16.7) so I used a bit more
Wanted to use lower attenuation yeast to keep the FG higher (Blackhouse is 1018), happened to have WLP051 on hand. Would have used WLP001 otherwise.
BOTTLING UPDATE:
Tastes a it strongly of bitter coffee before adding coffee beans, so maybe use a smaller percentage of coffee malt next time. Bottled 3L without coffee, and racked another 8.5L or so onto 50g of whole beans (30g Sarutahiko's dark blend and 20g About Life's Ethiopia Heirloom). |

Notes: We accidentally did a higher mash temp than intended when testing this recipe, so we likely ended up with more unfermentable sugars. Also lost quite a bit during the boil (again, higher temp, and cold air with an outdoor brew), so we ended up topping things off a bit (added 1 quart of water), and had about 6.75 gal at pitching.
This was separated into two batches for fermentation. After some experimentation, the recipe has been altered. One batch had cacao nibs added during primary, one secondary... our goal was a hint of chocolate, but if you want more of a chocolate kick, add them in secondary. Also bumped the extract to 3 oz for sufficient flavor.
Overall, it's a somewhat malty sweet taste, with nutty overtones, and a slight chocolate finish. |
