Notes: Boil water first to deoxygenate, add maltodextrin and 1 oz nutrient blend (to sanitize), cool to 170, add flaked (quick) oats, hold for 30 minutes (this supposedly locks in starches for mouthfeel, but they may be fermentable by the Brett later on... so if nothing else, it will just give them more food for the funk. I used a bag, and squeezed when done... lots of gooey goodness came out!), then cool to 100 F. Add honey and mix until dissolved well. Measure pH if able, and add 88% lactic acid to adjust pH down to ~4.5 (not required, but helps against unwanted organism contamination), and then pitch one shot of Goodbelly (lacto plantarum). Make sacc yeast starter, oxygenating and adding 1/2 oz yeast nutrient.
Let sit for 24-48 hrs (to taste, or pH reading, if you're looking for a specific level). Can boil now to kill lacto and lock in sour level (but boiling will also volalitlize some honey aromatics, so I don't plan on doing it), or just pitch sacc if you don't mind it getting more sour over time (I'd only go 24 hrs if so). Add 1/4 oz yeast nutrient when pitching sacc. Ferment temp controlled at 64-5 for first 3-4 days, degassing each day, then can warm up to room temp to finish attenuation, adding last 1/4 nutrient then. After a week or so (doesn't need to be completely dry yet), add Brett(s), and let it do its thing for a couple months...
Dry hop, or add fruit to, all or a portion, if desired, before bottling. Get creative with complementary flavors! |

Notes: Steep grains in 9L of water at 68ºc for 45 minutes. Rinse grains and remove.
Make up water to 10L plus the dry malt extracts and bring to a boil.
While boiling, add the hops per the hopping schedule.
Add Irish moss after 45 minutes of boiling.
Cool the wort to 24ºc. Add to primary fermenter and top off with cold water to make 10L
Pitch yeast and aerate well. Add toasted coconut and coffee (straight from oven into fermenter). Ferment in primary for 5 days.
Rack to bottling bucket and add almond extract and priming mixture. Bottle and condition in bottle for at least two weeks.
Brew report:: FG was 1.013sg. Yeast attenuation was adjusted to match.

Notes: Mighty Duck! is an attempt at an extract Kwak clone.
Aiming to produce 40x330ml bottles from this brew so I need at least 13.2l available at bottling time. I'd need an estimated 15-16l going in to the primary fermenter.
Actually got 17l going in to the primary, topped up a little, to 18.5l, to bring the OG down from 1.078 to 1.070.
If I'd left the OG at 1.078 and fermentation ends at the anticipated 1.016 then the ABV would be 8.14% - closer to Kwak's actual 8.4%.
FG reading is 1.010 giving an ABV of 7.88%
Moved 15.5l to a secondary FV after primary completed. Is clearing nicely after the first week.
Bottled 46 x 330ml bottles from the secondary. Very little sediment and a good, clear, beer going in to the bottles.
Beer at bottling was sitting at 11C hence the lower volume of brewing sugar (corn sugar) than I'd normally expect for a target CO2 volume of 2.2.
1st photo is Kwak on the left, Mighty Duck on the right after 1 week in the secondary. Has the banana hit you get from Kwak.
The flavour development in the bottle has been interesting.
For the first month of bottle conditioning I tasted a bottle at week 1 and 2 and the banana flavour was reducing with bitterness increasing. I waiting until it had a full month in the bottle before tasting again and it was the same change - even less banana and more bitterness.
Zero carbonation at the end of month 1.
Waiting until month 2 and a big change - banana flavour is starting to re-appear and that rich Belgian Dubbel flavour is starting to appear. The bitterness has almost completely dissipated.
End of month 2 and the carbonation is starting to appear, a good hiss when the bottle opens but overall carbonation is light.
The beer is almost completely clear now too.

Pureed 4.5 lbs of mixed frozen berries in food processor. Dissolved 1 campden tablet in boiling water and mixed with pureed berries. Then placed berries in nylon bag in secondary with airlock stuffed with cotton swabs.
9 days after brewing racked beer on top of fruit.
Bottled 28 days after brewing when fruit started mellowing out.
OG was 1.06 and FG 1.016. |
