Notes: Steeped grains at 158 for 45 minutes.
Brought to boil and added extract and hops.
My OG was 1.052 but it finished at 1.013.
I cold pressed ground coffee with a 4:1 ratio (water:grounds). Added 1 tsp per bottle. ( did 4 bottles with 1.5). Created a sugar syrup. Did 1 C sugar, added boiling water to reach the 1.5 C mark, then added 1 tsp per 12 oz bottle. Has a good coffee undertone without the added coffee. |

Notes: Steeped grains for 20 minutes before boil.
Made a yeast starter.
Primary temp fluctuated between 17C and 21C. Maybe down to 16C - winter temps. Fermentation not visible until 48 hours.
Primary for 12 days, not sealed. Opened maybe 6 times total to check fermentation.
Transferred to secondary with racking cane. First time unsuccessful, so I had to refill siphon with sanitizer and do it again.
Bung was still wet when attempted to put on. Pressed it too hard and it entered carboy. Temporarily covered with unsanitized aluminum foil for 24 hours.
Boiled 300ml of water and added 1/2 cup corn sugar (dextrose). Worried about 1 gallon of headspace in secondary. Added dextrose and installed bung and airlock. Filled airlock with vodka.
Bottled on 02/19/2014.
Update: 07/22/2014. Forgot to take tasting notes :(. But I remember it being really good despite my conceived screw-ups. |

Notes: Clarifier at 20 minutes
Use a late addition liquid malt extract (15 minutes left in the boil) to get a lighter color.
Centennial and Cascade hops give this ale a nice floral aroma and taste. IBU of ~36 is not too overpowering either. Has a relatively high alcohol content (matches the beer style in all other ways). Steep specialty grains for 30 minutes using steeping bag. Note also...late addition of the LME will result in slightly lower bitterness than the calculator figures. This is our "house" beer, typical of Pacific Northwest.
****
Note: This is a small batch extract brew. Use the scaling tool to increase to 5 gallons if desired.

Notes: Based on a recipe:
http://www.britishbrewer.com/tag/best-bitter/
Great recipe: simple and produced a really delicious best bitter that was very true-to-style. Would make this one again. Might consider dry hopping with 12g Fuggles to lift the hop aroma but I don't think it's really necessary. |

Notes: This remarkably robust porter stands tall among the competition. Constructed of an intricate blend of caramalt, chocolate and lager malts, this deep brown beer is full bodied and rich in flavor. Hints of toffee and trace notes of chocolate are just a few of the attributes that define this well balanced brew. The Black Tower is a well crafted monument of strength and beauty.
-Mr. Beer
What can I say other than Wow. Everything was DEAD on with this. Carbonation just about blew my face off when I popped the swing-top. Real malty flavor and smell. Thick creamy chocolate head. Very light bodied and extremely easy to drink, Not as heavy as some of the Porter styles I've had in the past. Delicious.Very proud of this recipe. |

Notes: Ferment 3 weeks, after primary fermentation begins to slow (around 3-4 days) add simply limeade otherwise fermentation might overflow.
*Optional cherry addition after 2 weeks to produce a more cherry limeade flavor. I usually split the batch, bottle half normally and add the remaining beer to secondary racked on sour cherry concentrate for a few days then bottle. |

Notes: Earlier tastings were extremely oaky(bottling + 2 weeks), the oak has now mellowed a bit (Bottling + 55 days), but is still a little overpowering. I'll consider halving the amount of oak in next year's batch (1oz instead of 2 for 2 gal), as it is difficult to detect any of the peatier notes from the peated malt with all that oak. Otherwise, very tasty, friends were shocked that it was home-made. |
