Use a late addition liquid malt extract (15 minutes left in the boil) to get a lighter color.
Centennial and Cascade hops give this ale a nice floral aroma and taste. IBU of ~36 is not too overpowering either. Has a relatively high alcohol content (matches the beer style in all other ways). Steep specialty grains for 30 minutes using steeping bag. Note also...late addition of the LME will result in slightly lower bitterness than the calculator figures. This is our "house" beer, typical of Pacific Northwest.

Notes: Steeped grains at 158 for 45 minutes.
Brought to boil and added extract and hops.
My OG was 1.052 but it finished at 1.013.
I cold pressed ground coffee with a 4:1 ratio (water:grounds). Added 1 tsp per bottle. ( did 4 bottles with 1.5). Created a sugar syrup. Did 1 C sugar, added boiling water to reach the 1.5 C mark, then added 1 tsp per 12 oz bottle. Has a good coffee undertone without the added coffee. |

Notes: This session-strength Saison of summer pours tawnygold and perfumes the air with tangy yeast and pungent hop aromas. The flavor is lightly earthy with spicy, flowery hops and a grain-and-bread malt character; caramel malt dukes it out with Saaz and Styrian Goldings (Celeia) through the middle before a palate-cleansingly dry finish. The blend of malt and hops combine to bring out the best in the real star of this sprightly Belgian ale: Wyeast’s immensely popular Saison strain.

Notes: This is a very simple cider with few additives to let the apple flavor shine through. With proper aging, it produces a dry, fruity cider.
- Add 1g/L Malic acid to lower pH by .1 as needed to reach 3.7 pH.
- Check pH and add potassium metabisulfite as needed for a partial kill (for more information see chart: www.cider.org.uk/sulphite.html).
- Stock solution SO2: dissolve 3 grams of potassium metabisulphite in 30 ml (also grams) of water which corresponds to 50 ppm of SO2 for a six gallon batch
- Wait 24 to 48 hours before adding pectic enzyme and pitching rehydrated yeast.
- Primary fermentation: 4-6 weeks @ 55°
- Add 5 crushed campden tablets dissolved in a bit of cider to carboy /keg before transferring for secondary/conditioning.
- Secondary: 8 weeks or until clear @ 60°- 65° (cellar temps)
- Keg condition: 6 months @ 60°- 65° (cellar temps) in pressurized keg
