Notes: Gather 2.5 gallons of water and begin to heat. Add the bag of grains and steep until the water temp reaches 170 degrees. Continue until boiling and add LME. Return to boil and add Wilamette hops. After 50 min. add Cascade hops. Once complete bring the wort down to 100 degrees. Put 2 gallons of cool water into the primary fermenter, and add the wort into the primary fermenter, and continue to add water until it reaches 5 gallons. Pitch the yeast once the wort is at 70 degrees. Let sit for minimum of 2 weeks in primary, then move to secondary, where I usually let sit for another 2 to 3 weeks. At this time either bottle or keg. When I keg I force carbonate at 20 lbs. of CO2 for 3 days, then reduce to 5 lbs. CO2 serving pressure.
This is a very drinkable beer with a low ABV. It goes great with food and my wife likes it with an orange wedge. It's a great spring time ale that's not too heavy, but not as light as a pilsner. It would be a great base if you want to experiment with fruit flavors.

Notes: This is a delightful extract IPA with a light maltiness that profiles Citra’s tropical fruit flavor and aroma.

MALT/GRAIN BILL
8 lb (3.6 kg) Pale liquid malt extract (Note - I changed to 7 lb LME + 0.5 lb DME to get to correct OG)
1 lb (454 g) Crystal 10 malt
0.5 lb (227 g) Munich malt
HOPS SCHEDULE
1 oz (28 g) Citra at 60 minutes
1 oz (28 g) Citra at 30 minutes
1 oz (28 g) Citra at 15 minutes
1 oz (28 g) Citra at 0 minutes
2 oz (57 g) Citra at dry hop
DIRECTIONS
Heat 5 gallons of water to 170°F (77°C). Steep the grains for 30 minutes. Bring the wort to a boil. Once you reach a rolling boil, add a quarter of the malt extract. Boil for 60 minutes following the hops schedule. After flameout, add the remaining malt extract.
YEAST
1 packet Safale S-05
BREWER’S NOTES
Let ferment at 68°F (20°C) for 2 weeks. After fermentation, add the remaining hops to the vessel. Dry hop for 1 week, then bottle or keg.
Brewed 11/28/21. Used imperial flagship yeast and 1lb of 10 degree cara? Malt as they did not have crystal. Bumped up DME to 15 oz vs 8 oz in recipe as I wanted to be closer to 6%. At 5 gallons the OG was 1069. Fermented for 10 days with FG of 1015. Adjusted yeast attenuation up.
Drunk after 2 weeks in keg. Lovely aroma and citrus taste, but too much bitterness that lasted a while. |

Strike water 72.7oC
Mash came to 62, where used calc in BF to aim for 65 ending with requirement of 71 strike. For future, add 4-5oC for a 15 l mash. Added 1.5l boiling water.
Mash finished at 62 after starting 65.6, 75 mins
Much higher efficiency than expected, 70% based on wort vol and gravity of 1.038. Had to up batch vol here!
No mash out on this one, just sparse at 78oC water. Could have increased this, didn’t monitor runnings T
After checking gravity of wort, found very high, so did another batch sparse to recover another 4l or so from the grain - still coming out at 1.025 but overall gravity of wort now at 1.038 so stopped, worried about astringency too (no taste of it in final runnings though)
Had to revert to dry yeast after starter too slow (start earlier than 2 days for recovered yeast!). 1 pack of US-05, added dry to wort. Going well when checked inside bucket 16hours after.
Very happy so far with brew, disappointed on yeast prep unrelated to this recipe now. Original recipe states Wyeast 1065. I had planned to use WLP001 recovered, but starter not ready in time. Replacement dry US05 - happy with fermentation progress morning after
Tested after 10 days, appeared not to be finished. After 16 - done. Add hops for 6 days then bottled.
