Notes: To commemorate Todd's visit to North Adams, we sampled Heady Topper, Focal Banger, and Pliny the Elder. We opted to try to replicate the Pliny recipe. WE actually used Pale Ale DME which is 6 L but is not in the selection dropdown. We also used a double packet of Safale 05. The yeast was rocking after less than 24 hours. The OG was around 1.084, much higher than above. I have a feeling that the IBU's are higher too. The process was pretty much standard - we boiled 3 gal, added almost 3 gal of near frozen water to get to the 5.5 marker. Got to chill the wort in the snow due to the recent storm that brought 10".
Tasted after 2 weeks in bottle and fiery and clean with a different bitterness than I am used to. Definitely taste the high ABV as even the high IBU's don't mask it. But still balanced and quality. Wish I had a Pliny for direct comparison. |

Notes: Trying to bring some of the malt bill charecteristics from darker belgian ales and add them to a belgian pale ale strength bill.
Went with belgian abbey yeast instead of belgian ale yeast to get slightly more subdued yeast character, but still ester production.
Light chocolate might be a bit too dark for the rest of the beer |

Notes: Red Star Cotes des blancs yeast (5g for 5 gallon batch)
Go-Ferm Protect Evolution Rehyrdation method:
1) Boil 10 g Go-Ferm in 200 mL distilled water
2) Cool to 100F
3) Collect approximately 100 mL in a sanitized container
3) Add yeast and let sit for 20 minutes before pitching
Fermaid O additions:
- After 24 hours of fermentation, add 3.75 g Fermaid O
- Rehydrate in 50 mL distilled water and add into fermenter
- In day 3 of fermentation, add the other 3.75 g Fermaid O
Last FG was 0.998. Would maybe use less nutrient. Got a egg smell at the end that I hope will go away. Also, too much nutrient can leave off tastes. Didn't notice last time. |

No obvious mistakes on brewing.
OG 1.050
2 1-gal fermenters used. 1-gal for my 4th generation Safale05 and 1 gal for my 2nd generation British ale II Wyeast.
Going to set in 68f until the brewing starts and then will move to my 63f basement with a blanket for one week. back to 68f for another week. Transfer to secondary for one more week. Then bottle.
Used leftover wort (.25 gal) to re-start my yeast starters. Had extra water because I used extra to extract all the LME from the plastic containers.
Created this recipe to use up leftover materials from brewing the "sket english porter" on American Homebrewers Association website (membership required to view). Williamettes I had laying around. Mostly wanted to keep my yeast cultures healthy.
Will update as this moves along.
Update:
The beer fermented with American ale yeast tastes great. Flavor of the malts comes through nicely.
The beer fermented with British ale yeast is even better. Definitely fruitier. A softer mouth-feel.
