Color text:
English old ale is like English brown ale's big brother; they both have the same caramelly / nutty malt character with toffee like, roasty overtones. Old ales just have a lot more of it, and they approach barley wines in terms of body and alcoholic strength. Our formulation includes a proportion of oats which helps build a creamy, mouth filling body and hold a dense tan head atop a deep reddish brown beer. The unconventional addition of dark candi sugar boosts the gravity and ads a rich rum like dimension to the complex flavor profile. Although our old ale uses a healthy charge of English hops, the overall impression is of malty complexity rather than hoppy and bitter.
Originally brewed on 3-1-06.
Started out slowly but when active fermentation started it was the most vigorous I had ever seen up to this point.
Transferred to secondary on 3-8-06. somewhat cloudy and slightly yeasty flavor. Several days after transfer, it started to settle and clear up. Smells yummy. Still the occasional bubble in the airlock.
A week after to transfer 2ndary the brew has a sweet, caramelly, kind of fruity, smell. It smells good but definitely not done yet. The yeast is starting to settle out and the color is getting darker. Perhaps should have left in the primary longer (2 weeks). |

Notes: I really like using orange peals while brewing - it pairs nicely with hops and highlights the citrus profile of the Cascade and Citra hops. This recipe utilizes dried orange peals from the Cara Cara orange. I buy them from Sprouts then dry out the peals in my dehydrator. Cara Cara oranges are a type of navel orange and is generally sweeter and less acidic than typical oranges. That makes them the perfect type of orange for brewing.

I originally called for 1 oz of orange peals in brew and dry hop but I upped that to 1.5 oz because that's what I had on hand. I also dry hopped in the primary rather than secondary.
Tasting notes:
This couldn't have come out better. It has a wonderful citrus aroma with a palatable, but not overly bitter, blend of hops. It's about as perfect of a New England IPA as you can get. Not as hazy as a lot of commercial varieties, but just as juicy.
Future changes:
The next time I brew I think I'll keep the 1.5 oz of orange peal both in boil and dry hop. However, I'll dry hop during the secondary instead of primary. I think I'll try the Imperial A24 Dry Hop next time as well. I was very pleased with A20, however, and highly recommend it.

Made yeast starter yesterday (~1L).
Today: Make Belgian candi sugar (syrup). Steep grains 30min at 66C, pour into grain bag, sparged with 68C water into boil pot.
Add DME and water, bring to boil.
Add 60' hops and gypsum. Boil 40'. Add 20' hops and irish moss. Boil 20' more. Chill.
Add to primary with remaining water and yeast. Aerate. Determine Brix.
Brix =22.8 = 1.096 (Higher than expected. volume may be lower than 5.5 gal, but it is certainly > 5)
Ferment.

| Notes: I used 14 Liters of degassed Moussy Near Beer cut with water to brew this. Add near beer to large brewpot/kettle over low heat and stir until all of the CO2 has released from the beer before adding the white sugar. Use another large pot to steep grains in 1.25 gallons of water for 45 minutes. Remove spent grains and bring to a boil before adding hops. Boil hops for 45 minutes. Remove hops and cool to room temp. add all to fermenter, and top up with additional water to make 7 gallons. Take OG gravity measurement and pitch yeast. you know the rest. |
