Notes

Heat 5 gallons water to 170 degrees
Remove from heat - Add malts in mesh bag - Steep separately until boil achieved
Bring 6.5 gallons water to boil
Add steeping tea. Add LME and sugar.
Bring to boil - start 90 minute countdown
At 60 minutes remaining, add Centennial
At 20 minutes remaining, add half of Cascade
At 15 minutes remaining, add Irish moss
At 10 minutes add brewers crystals
At flame out, add half of Cascade
Cool down to 70 degrees
Transfer to primary (2 x 5 gal) containing bourbon soaked oak chips and half cherry juice.

The beer turned out fantastic with a beautiful Amber color and nice clarity. The cherry was very light in flavor and, if brewed again should be doubled. The bourbon and oak comes through predominantly and added a nice characteristic. We probably should have let is ferment one more week before bottling (we fermented appox. 19 days). We garnish the poured beer with a twist of orange for the final Old Fashioned feel.
