| Notes: Brewed on july 20th normal brew 1.steep grains.30 min 154degrees 2. add water to 4 gallons. 3.bring to boil. 4.take off burner stir in dry malt extract. 5. bring to boil again watching for hot break. 6. once boiling start timer and add first hops addition.7. At 30 next hop addition.8. At 10 add a yeast nutrient. (I use some stuff called fermax.) Flame out ......Now every thing must be SANITARY. Stir spoon Pot lid Scissors straining bag fermintor/Lid, bubbler I still cool with ice. 9.coll till your temp is around 60/65 degrees, 10. (FINALLY) Pitch yeast. Ferminting should be done in the dark cover your ferminter. |

Notes: This beer should have a slight cidery character from the cane sugar, that's by design. It is also more hoppy than most American Cream Ale's more along the lines of an English Bitter. The specific hops are not critical, but I always use one high-alpha hop in conjunction with a finishing hop.
I put this into growlers with a low CO2 rate about 1.5 volumes which works out to 1/2 Tbsp cane sugar per 64oz growler to keep them from exploding. After a week or two they are ready.
Quick, cheap, easy to make and easy to drink. Its my table beer. |

| Notes: Ferment mead to the highest alcohol content and feel free to add some super-high gravity yeast from white labs as well to try and top out at 20% or as close as possible. After finishing fermentation, split the batch into 2 separate buckets and place in freezer. Skim ice off of mead as it freezes to bring up the alcohol content. Hope is to get alcohol up to 25% or 30%. |

Notes: This recipe came from Charlie Papazian's "The Complete Joy of Homebrewing." I made a couple of changes though; since Briess LME comes in 3.3 lbs containers I changed the recipe from 6.5 lbs. to 6.6 lbs of LME to make it easier. Charlie also called for 18 AAUs which would have put the IBUs near 80 which didn't seem right to me for an altbier. I cut it 11.1 AAUs for my first try.
Lastly, note that this is an ale that you will lager. After racking to the secondary fermenter, lager it for 2-3 weeks at 55 degrees Fahrenheit. |
