Notes: I messed up this recipe when I originally entered it. The Styrian Goldings are DRY HOP not first wort.
The beer is bitter due to both the hops, 90 minute boil and the use of crystal,chocolate and black malts which adds that burnt caramel edge, and the beer is very similar in basic taste to Rigwelter, but the dry hopping gives it a nice aroma which Rigwelter lacks in my opinion.

Lots of clove flavors from the saison yeast (varied fermentation in the high 70's to funk it up a little) and a higher-than-expected abv made the name of this beer obvious.
I tweaked the steeping efficiency and attenuation to reflect what we actually saw in the beer. The apparent attenuation was crazy high - but I'm not complaining. Not sure if it's the yeast, the high fermentation temp, the fact that there was mostly very light malts, or some combination of all those things. |

| Notes: Replace 9.5 lbs of American 2-row with 6 lbs of light dry malt extract. Steep the specialty grains (crystal 120L, chocolate malt and biscuit malt) at 150-155F for 30 minutes using a muslin grain bag. Remove the bag, allowing the grains to drain into the boil kettle. Turn off the flame and dissolve the extract in the kettle. Turn the flame back on, bring to a boil and proceed as normal. |

Notes: Kiwi is peeled and cubed to 1/2", added at flameout, let sit for 20 minutes. Transfer into carboy. Primary fermentation will take a little longer than usual (15-20 days). When kiwis rise to top and are almost white in color, this will signify they have been stripped of flavors and sugars.

| Notes: Opted for a light ginger forward summer ale using WLP 001. Fermentation aggressive for 72 hours at 73 degrees. Ginger is not overpowering but subtle enough to taste the spice. Taste test post fermentation and add remaining ginger in hop sack until desired taste attained. |
