Notes: I brewed today on 2/13. I ended up with a pretty low starting gravity of 36. Have a feeling I didn't crush the wheat enough. Will update you when it has been kegged.
As of the 20th it has been kegged. The final gravity of 6. Pretty happy with the results, took a week of off-gassing to get rid of the sulfur smell produced by the german yeast, but it ended up making a really easy-to-drink and good-tasting beer. |

Notes: Kettle sour.
Mash as normal. Quick 10 minute boil. Cool to 40c. Pull off some wort, mix with yoghurt and add to kettle. Leave covered at temp for 24 hours (possibly longer) to sour.
Add 5g Lactic Acid after mash before 10 minute boil to pre-acidify wort.
Then, boil as normal, chill, pitch and ferment.
At some point add frozen fruit or purée - probably after two/three days so at end of fermentation. Bottle once that has fermented out.

| Notes: After the mash was finished 1.5 L of unhopped wort was taken out of kettle and boiled seperately on a high heat for approx 30m stirring often to prevent burning. The resultant solution (250 ml) was a much darker shade of brown and had strong caramel and toffee flavours. This was then added back to the boil. |
