Yeast starter 2 days in advance. Use 4L flask
Check pH at end of mash = target 5.4
Chill as low as possible, then let sit x 60 min before transferring to FV.
Chill to 48F, oxygenate, clarity firm, and then pitch yeast slurry
Ferment at 48F x 7-9 days until near end of fermentation, then raise 2F/ day to 64F.
Total in primary ~18-20 days
Check pH at end of fermentation, target 4.3
Then cold crash x 7 days, no gelatin. Keg without biofine. Pressurize to close lid then lager x 4 weeks.
After 4 weeks, pull 1/2 pint of sediment and add 5 mL biofine. Pull 1/2 pint of sediment after 7 days then carbonate.

Notes: 1L Starter of each yeast - WLP530 (Abbey Ale) and WLP550 (Belgian Ale)
Last brew, I only added two packs of the WLP530 and I think it was stressed a little too much - definite acetaldehyde during fermentation. Only slight hints of it on the nose after aging.
Ferment at 70F for the first two days, slow rise (1F/day to 75F), and ferment at 75F until completion. Drop temp to ~66F when within a few points of target and let it rest/age until approximately 5 weeks in primary, then I'll wait for it to tell me when it's finished. |

Notes: Flavor with tincture at bottling - the flavor, particularly orange, will mellow after 3-4 weeks in the bottle.
Tincture:
Prepare after you pitch the yeast - allow tincture to develop while beer is fermenting.
2-3 3" cinnamon sticks, chopped fine; 1 oz. of chopped fresh ginger; and, 1/2 oz. of bitter orange peel. Place into mason jar and add enough high-quality vodka to cover; add more vodka once spices have soaked up the initial amount.
[3/2023]. This was my least favorite of the winter lager clones. The spices were over the top powerful and made it more of a gingerbread lager. Consider leaving most of the spices out next year or making something different. |
