Notes: This is the base recipe from Founders for the now retired "Curmudgeon" old ale. Lots of ways to tweak it, including soaking the wood chips in rum, bourbon or whiskey. Then you can get fancy...with splitting the crystal into multiple crystal malts, or subbing maris otter for the 2-row.
Primary 9 days, then secondary with Oak.
Looked at alternative yeast - they suggested White Labs WLP060

Notes: Moderate to high body with a creamy rich mouthfeel. The aroma is a mix of cold brew coffee, malt roastiness, and a faint sweetness. The flavor follows the aroma, with light roast, caramel sweet, chocolate, and a hint of dark fruit.
For my cold brew, I added roughly 120 grams of coarsely grounded Venezuelan single bean (light roast) coffee to 4 cups of water and let sit in the fridge for a couple of days before adding to the keg before packaging.
This has been one of my favorite stout recipes so far and the aroma is so incredibly rich and pungent. |

Notes: Turned out good. Was really bitter in a hop way until the end of the fermentation. Then the roasted quality turned up and the bitterness was on the border of astringent but seemed to be from the carafa ii.
People liked it. Definitely unique.
Next Time: I would use a different yeast.
