Notes: Mash-in to reach a beginning mash temperature of 131F (protein rest) & hold for 20 minutes. Ramp or raise the temperature of the mash to 146F (saccharification rest) and hold for 60 minutes. Finally, ramp or raise the temperature to 168F (mash-out) and hold for 15 minutes. Lauter and sparge to collect enough preboil volume to allow for a 90 minute boil. Proceed with the 90 minute boil, adding the Simplicity candi syrup in the last 15 minutes of the boil.
Chill to 64F, pitch yeast, and allow to raise to 82F over the course of 5 days.
Ferment at 82F for 2 weeks.
Then cold crash and lager at 32F for 3 weeks before bottling in Belgian bottles or kegging. |

Then add Wyeast Roselare Belgian Blend

At secondary fermentation when you add in the Wyeast Roselare Belgian Blend, you will also want to add 2 LBS of fresh or dried currants. Do you best not to let your temp go above 65 F. Taste the beer at about 3 months to gauge the sourness, if it is just about right then soak 4 Oz's of either oak cubes or oak chips in Cabernet Sauvignon (Vinnie Cilurzo from Russian River recommends using a Kenwood Cabernet Sauvignon since it is widely available and of good quality), place it in the fermenter and let the beer finish up for a month or two. As a last step, prior to bottling add some Rockpile RP-15 dry wine yeast to allow the beer to bottle condition. Notes: Red Wheat is Raw Wheat from Breiss. I also oven baked it at 250 F for 4 hours before being millled and it was not washed or germinated beforehand.
Strong head retention from the wheat, warmth from the alcohol and tasty malt in the aftertaste makes for an interesting IPA.
Hops taste of grapefruit/melon with moderate-strong bitterness. The flavor/bitterness is slightly in favor of bitterness.
The FG should be 1.02 or lower, not 1.025 |
