Notes: New method:
1.1 Mash as usual. I mash at 65c for an hour and sparge with 80c water.
1.2 Primary: Use Lallemand Philly Sour for fermentation.
1.3. Secondary 4-8 weeks: Add cloudberries that has been frozen and then pasteurised at 70c, then chilled.
1.4. Keg, drink & Enjoy
Old method:
2.1. Mash as usual. I mash at 65c for an hour and sparge with 80c water.
2.2. Let wort temp drop to around 40 - 45c.
2.3. Use actic or phosphoric acid to reach pH 4.5
2.4. Put wort in a clean and sanitised corny keg. Add lactobacillus.
2.5. Blow out any oxygen - important!
2.6. Keep for a couple of days and check pH. If possible, maintain 40-45c.
2.7. When pH is down to 3.6 - Add 5 liter water to be boiled away and boil as usual.
2.8. Goal is still 19 liters to fermentation.
2.9. Primary fermentation 1 week: add yeast and ferment as normal.
2.10. Secondary fermentation 4-8 weeks: Add cloudberries that has been frozen and then pasteurised at 70c, then chilled.

Yeast
DRY: 2 x Sachets of Danstar BRY-97 US West Coast Ale yeast – this will produce a very dry West Coast Style IPA.
LIQUID: If you want an aromatic yeasty East Coast Style IPA chose this one – GigaYeast Vermont IPA GY054
Method:
Mash – the brewer should do normal mash regime, mashing at 66 C for at least 65 mins
Sparge – once again the brewer should do normal regime at around 76C
Boil – vigorous boil for 60 mins
Hops: Add 20g of Nugget or clean bittering hops @60 mins, 20g of Idaho 7 and 20g of Chinook @10 mins
Pitch Yeast & Fermentation – Aerate well and ferment at 18C until FG is reached or terminal gravity is table for two days.
Yeast off and dry hop after primary for 72 hours with 3g/L of Idaho 7. If your fancy is double dry hopped AIPA then dry hop with 2g/L for 72 hours followed by a second dry hop of 2g/L for another 72 hours.
Crash chill and bottle or keg as normal.
Mature for 10 days before carbonating. |

Notes: At flameout: 1/2 Habanero + 4 Guajillo + 2 Ancho Chiles all dried, chopped + 2 oz. Cinnamon chips in nylon bag. Steep for at least 15 minutes (I left mine in for an hour while wort was cooling down to transfer temp).
At final gravity: "Dry hop" 1/2 Habanero dried chopped + 0.5 oz. Cinnamon chips + 1 oz Cacao Nibs in nylon bag to fermenter for 3-5 days. (Tip: Best to soak this mixture in vodka for a few days first to kill off any nasties that might be present.) |
