A single infusion mash will work just fine here. Look for a mash temperature at the upper range of the brewer’s window (154°F to 158°F). This will produce more non-fermentable sugars and create the beer’s rich, sweet profile.
A pitching temperature just below 55°F is common. Work hard at keeping your fermentation temperature below 62°F.This will create a clean, very low-ester profile, richly malt-forward beer, and keep fusel alcohols down.
Remember, yeast has to work harder in high gravity beers, so be sure to aerate/oxygenate the cooled wort well. Also, be sure to pitch enough healthy yeast by either making a starter (liquid yeast) or cast more than one packet of yeast (liquid/dry yeast). |

Sample Brew-In-A-Bag equipment profile set up for a 15 Gal/50 litre brew pot (diameter of 40cm or 16 inches) using a polyester grain bag to hold the grain. This profile should be used with the BIAB mash profiles available in the BeerSmith mash profiles area. The above assumes loose pellet hops and only clear, chilled wort transferred from the kettle using no trub management techniques. Experienced brewers should adjust 'Loss to Trub and Chiller' and 'Brewhouse Efficiency' accordingly to suit their trub management techniques. |

Notes: Added 2.5 lbs of concord grapes in secondary. I put in oven at 200 for 20 minutes to sterilize. Then mashed it with a potato masher. Tastes very grapey at bottling. Grapes in secondary for about 2 weeks.

Notes: Pitch a 3L starter from stir plate.
Pitch at, and set fermentation chamber to, 13.3C.
After two days, bump up to 15C.
After three more days, bump up to 20C.
After 10-14 days total, replace airlock with foil+elastic (to eliminate suck-back of liquid), crash to 3-4C for 2+ weeks. Replace airlock when down to lagering temp.
Note: could also use something in airlock that won't contaminate the beer if it gets sucked back in during the cold crash (vodka). |
