Notes: Rack onto cherries after primary is completed. Use 50:50 mix of dark sweet and sour cherries, as many varieties as are available. After ~1 month (or longer if needed), rack onto one oak spiral that has been soaked in bourbon. Leave until flavors develop. Add additional bourbon to taste. Let mature and develop for several months (3-6 minimum). |

Running low on Amarillo so swapped out for Citra.
Trying to achieve a Golden IPA full of hop layers but crisp and refreshing...certinly is close to that but addition of Citra makes the bitterness unbalanced (having brewed the original recipe), perhaps a replacement for the bittering hops which complements Citra a bit(ter) better. |
