Mill the grains and add the pumpkin puree, then mix with 6.25 gallons (23.7 L) of 163 °F (73 °C) strike water to reach a mash temperature of 152 °F (67 °C). Hold this temperature for 60 minutes. Vorlauf until your runnings are clear, and lauter. Sparge the grains with 1.5 gallons (5.7 L) and top up as necessary to obtain 6 gallons (23 L) of wort. Boil for 60 minutes, adding hops according to the ingredient list and Irish moss if desired. After the boil, chill the wort to slightly below fermentation temperature, about 66 °F (19 °C). Aerate the wort with pure oxygen or filtered air and pitch yeast. Ferment at 67 °F (19 °C) until wort reaches 1.028 specific gravity, then free rise to 72 °F (22 °C) until the completion of primary fermentation. Once the beer completes fermentation, reduce temperature to 32 °F (0 °C) and hold for 10 days. Draw a sample, and add spice extracts to taste, starting with a ratio of approximately 3:1 for the cinnamon to other extracts. Once the exact ratio/intensity is determined, scale up and add to the fermenter. Then bottle or keg the beer and carbonate to approximately 2.25 volumes.
End Spice Notes: The common pumpkin pie spices are; Cinnamon, Nutmeg, Allspice, and Ginger. Add just one teaspoon of the spice blend to the boil in the last ten minutes. It is very easy to overpower a beer with these spices, and it is easier to add more than take some out. Fine-tune the spice level at bottling and enjoy! |

Notes: Lower ABV Session Pale, experimenting with Pilsner Malt as the base. This is supposed to be a hop showcase with very little input from the malt.
Going with a "Thick" BIAB technique. Using a 5gal grainbill with a 3gal mash (kettle/stove fitment issues preclude the use of full water volume on the stovetop, AND back-adding chilled water will speed up the process! WIN WIN!)
Treat the recipe as 5gal, but only use 3gal to mash with - making essentially a diluted DIPA, which comes out as a session.
I'm trying to streamline a lot of processes to make this recipe doable in a 2-3hr time frame, including the chilling and pitch.
Sugar is added to lower the grain weight (again, kettle/fitment issues) and to see what affect this has on the finished beer. The sugar is added as a simple syrup (~1lb in 3c water) after high kreusen is reached in the fermentor. I don't necessarily want the yeast hitting that sugar first, and I'd rather they get it as after they're done with all the malt sugars. This is an educated guess.
I'm trying 10 new things on this beer, but it'll come out just fine.
11/30 - Notes - Beer has been completed and on-tap for more than 2 weeks. It has a bit of catty smell from the Citra despite trying to avoid boiling it for too long, and some generally pissy-ness from the Pilsner, both of which are fading fast. It's bright and clean tasting and damn near chuggably smooth. Brew day start to finish was 2:45, grain to glass in 6 days.
I forgot my Whirfloc, but tried using a gelatin fining to some moderate success. |

1. Chiffonade the Basil.
2. Dissolve Belgian Candy Sugar in to 1 cup of water at medium temp stirring often.
3. Bring mixture to a boil.
4. Remove from heat and add basil.
5. Let mixture stand for 2 hours.
6. Strain the basil out of the mixture
Yield: ~12oz of syrup
Ferment at ~68 degrees F for 7 days
Rack to secondary and add .5oz kent goldings
Allow secondary to clear for 7 days. |

For water, add calcium chloride to reach about 100-150 ppm chloride. Don't use gypsum or epsom salt because the sulfate will accentuate the bitterness.
Mash at 150 °F (66 °C). Collect wort and boil for 60 minutes, do not add any hops. Cool the wort to 100 °F (38 °C) and transfer wort to a fermenter or keep in pot. Pitch the Lactobacillus of your choice, and add lactic acid as needed to achieve a pH of 4.4. If you are in a rush, sour as warm as you can reliably hold (up to 115 °F/46 °C), ideally above 80 °F (27 °C). Approximate souring time 1–3 days to reach pH 3.3–3.4. You can measure by taste, but the sweetness of the wort can make acidity seem milder than it will post-fermentation (even though the pH will rise slightly with fermentation and dry hopping). Once the desired acidity is achieved, return the wort to the kettle and heat to 180 °F (82 °C). Once the temperature is reached, turn off the heat and add the hops. Allow them to steep for 20–30 minutes before chilling to 70 °F (21 °C). Aerate and pitch a large starter of Brett (most commercial Brett strains are not packaged at a high enough cell-count to pitch directly). A 3-L starter on a stir-plate for a week should be adequate. Once the gravity stabilizes (two to four weeks), the beer is ready to package. If you are bottling, add the dry hops to the primary fermenter. If kegging, bag and weight the hops (I use new nylon knee highs and glass marbles) adding them directly to the keg during natural conditioning. Aim for 2.7 volumes of CO2. |
