Notes: Guessing the PPG for Ashburne Mild is wrong on Brewer's Friend. Should probably be 36-37 (though I mashed relatively low)
Recipe turned out great. Dry, really chocolatey (Fawcett Pale Chocolate is my new favorite malt). Would probably make this exactly the same. Perhaps a little crystal malt, though it seems the mild malt takes the place of that along with the brown malt. |

Notes: Soak vanilla for 7 days, add cocoa and coffee and soak for another 4 days, strain bourbon and add to fermenter
Use enough bourbon to cover the cocoa nibs
No idea how to cookies will effect the gravity
about 80% of the coffe-cocoa-vanilla burbon has spilled
-maybe create another mix of 80g cocoa 20g coffe and 3 tsp vanilla extract to cover it up
There was too much coffee, next time I should use a 4:1 ratio of cocoa to coffee (80:20)
Notes for next time:
Use less coffee and less cocoa
Use more vanilla
Bottle slightly sooner - after about 6 weeks
A bit less roasted malt - only 300g
Replace the cookies for base malt + slightly caramel malt like biscuit malt + caramel 30 |

Notes: Use reiterated mash technique to get high gravity wort from small kettle limitation. Divide 14 lb total grain in half, BIAB mash 7 lb in first volume of water, sparge with water (then save these second runnings to sparge the second mash runnings with), then drain. Empty grain from bag and then mash second 7 lb in wort from first mash (wort volume listed above under mash guidelines is amount left after grain absorption from first mash, not additional volume of water added). Then sparge this grain in first sparge runnings to get to preboil gravity (will dilute SG some, but I need the extra volume to reach preboil volume. Can add DME if need to get preboil SG higher). Then combine sparge runnings with concentrated first runnings in bigger kettle to boil.
Yeast I’m using is actually Opshaug Kveik (dried) from Mainiacal Yeast not in database, but similar to a Hornindal. Says it’s relatively clean, with notes of citrus and stone fruit. Tolerant to 12% abv. |
