Notes: Bring to a boil 6.5 gal of water and add the wheat.
Add the remaining wheat malt 15 minutes from the end of the boil. Shut off heat and add berries, do not boil.
Prior to bottling/kegging you can add extract flavoring for more taste, (I do not). A little goes a long way, if you add too much there's no going back if you don't like it.
With this yeast it takes 12-14 days at 65-68 degrees. Be patient.
Very berry taste, light amber tint with a lasting head. This yeast will drop and clear with time making a sparkling fruity beer. Great for the holidays! |

(What happened: 90 min mash -> 6 row slower and lower conversion???)
Hops loose in kettle.
Chill immediately at end of 60 min boil.
Allow to sit covered x 1 hr prior to draining to FV
Ferment at 50F x 7 days, then raise 2-3 F every 1-2 days until 64F or terminal gravity. Once SG has stabilized, cold crash x 7 days adding gelatin on day 4. Biofine 5 mL in the keg. |
