Notes: DESCRIPTION IN SWEDISH:
Instruktioner för "grumlig mäskning" (turbid mash):
1. Blanda malt och vete med 3,1 liter vatten i Kärl A (huvudsaklig gryta el. dyl.).
15 minuters rast vid 45°C.
2. Addera 2,8 liter vatten i Kärl A.
Det är nu totalt 6,1 liter vatten i Kärl A.
15 minuters rast vid 52°C.
3. Ta bort 1,9 liter grumlig vätska från Kärl A – häll denna i Kärl B (t.ex. en gryta).
Låt den grumliga vätskan i Kärl B ha rast vid 88°C tills vidare – OBS: vätskan i Kärl B bör kontinuerligt röras om så att den inte bränner fast i botten.
4. Addera 4,2 liter vatten i Kärl A.
Det är nu totalt 8,2 liter vatten i Kärl A.
45 minuters rast vid 65°C.
5. Ta bort 4,1 liter grumlig vätska från Kärl A – häll denna i Kärl B.
Det är nu totalt 4,1 liter vatten i Kärl A.
6. Addera 4,2 liter vatten i Kärl A.
Det är nu totalt 8,3 liter vatten i Kärl A.
30 minuters rast vid 72°C.
7. Häll tillbaka 1,9 liter av vätskan från Kärl B till Kärl A.
20 minuters rast vid 78°C.
8. Laka BIAB-påsen i Kärl C (t.ex. en kylväska i hårdplast), genom att hälla resterande 4,1 liter vätska från Kärl B över påsen.
10 minuters rast vid 88°C.
9. Koka 3 timmar tillsammans med gammal humle (finns att köpa hela humlekottar som är mer än 3 år gamla).
10. Låt lambicen jäsa 12 månader, t.ex. i en glasdamejeanne (för att minska kontakt med syre).
11. Alternativ efter jäsning:
A. Drick den som den är.
B. Addera frukt eller bär, låt den jäsa vidare några månader med frukt eller bär i.
C. Lagra lambicen 1 till 2 år till, blanda i en ung lambic (ca 1 år) och gör därigenom en gueuze.

Notes: Updated after the first brew, the mash has been split in two Beta/Alpha since I am not worried about body with 10% oats, secondly I updated the procedures.
This is a no boil/no chill stove top beer.
The bittering hop Simcoe, is boiled in 1 litre of water for 20 min, then allowing it to cool. The flavouring hops Nectaron is added into a 1 litre French press and immersed, then strained. Both are added at pasteurization to top up. The ceadar also adds some bittering.
Likewise, I added the acid rest for helping with municipal water alkalinity, feel free to skip if you have a better water source.
Yeah, and I am adding a cut up cedar plank to the fermenter cause f^%$ it, go big or go home. The cedar is really nice in this.
Bob, the namesake of this beer, was a former prof of mine that simultaneously was level-headed and looked as though his world was collapsing for the couple of years I knew him. |
