| Notes: Heated the strike water to 173. Drained half through the tube into the tun and then doughed in. I hit 150 without having to add anything. Temp dropped 1.5 degrees over the hour. I drained off about 2.5 gal and brought, brought it to a boil, and added it back in while sturring for a mashout. I sparged slowly until I hit 7.5 gal. When I took the reading it was the OG that I needed/wanted without adding the Turbinado. I figured with boil down and top off it would be enough to not need to further sparge and use that to top off. I did top off to 7.5gal at 15min in the boil. I also forgot to add yeast nutrient so I boiled and added some while cooling. I ended up collecting 6.5gal of wort from the boil. |

| Notes: Hit 152 perfectly strike water was 175F. Efficiency was down so I had to supplement with corn sugar and malt extract. I barrel aged it in a 5 gallon whiskey barrel for about 6 weeks. This brew took 2nd place in the Wood Aged Category at BAM World Cup of Beer 2014. I ended up entering it as a British Barley wine as a base style because it didn't really have American characteristics anymore. |

| Notes: Brewed 2/10/14. Blocked the false bottom on accident in the mash tun due to float so I had to transfer it to the kettle and then back to the tun. Topped off with 3/4 of a gallon of water to hit 151F. pH was 5.2 (estimated at 5.4). Hit 85% kettle efficiency. Efficiency was a it lower than usual might have been from sparging too fast. Runoff was also quite cloudy so not sure if that had something to do with it. False bottom got clogged a couple times when draining into the carboy. Possibly too much pellet hops and hot/cold break. Temp on day one of fermentation is about 64F. 2/12/14 temp has been between 65-67F. Added 3/4 of a pound of corn sugar in about a cup of water to boost up the OG. 2/13/14 temps were about 68/69F. 2/14/14 took out of the swamp bath and brew is sitting at about 71F. Dry hopped on 2/24/14 when all signs of fermentation were done. 3/5/14 biofined with 2 tbls. Cold crashed 3/7/14. Racked to keg 3/9/14. Pretty tasty IPA that has a bit of that catty thing going on. Wondering if I repeat this if I should switch all citra additions to 0min. Took 2nd place in the category in the Bridging the Gap competition. |

Add half of the water salt additions to the mash and the rest at sparge.
Add the FWH hops during runoff to allow hops to steep in hot wort as the mash is sparged.
Boil for 60 mins
Follow whirlpool hops schedule. Turn off whirlpool for last hops addition (the 20 min addition)
Pitch yeast and ferment at 67F for 3 days then raise temp 2 degrees each day until you reach 73F.
Pack at 2.6 vols
IBU's Target = 80
Pours hazy dark orange with creamy head. Juicy hop aroma, big citrus and tropical fruit. Flavor is lots of orange and tropical fruit with bready malt backbone and some piney resiny bitterness in the finish. Mouthfeel medium bodied with smooth carbonation. Serve in glass. |

Notes: Mashing Instructions:
Dough malt into 120 degree water. Pull 35% of grist and decoct. Decoction should rest 15 minutes at 147 degrees and boil for 20 minutes. Add decoct to main mash and let rest for 1 hour at 150 degrees. Raise temperature to 160 and mash out.
Extra Ingredients:
Invert and concentrate sugar the week before. Stir constantly and lower heat. Sugar will become thin caramel.
Water should be very hard; similar to Dortmund or Burton-on-trent. High level of Sulfates, Carbonates, and Salts
Yeast:
Wyeast 3787 and White Labs WLP 530 (both Westmalle Strains) should be added right away
Wyeast 1388 (Duvel) and White Labs 550 (Le Chouffe) should be added on day 3
Slurry from bottle of Westvleteren 8 added three weeks into fermentation when gravity falls below 1.025.
Fermentation started at 65 degrees. Temperature raised 2 degrees a day until it reached 85 degrees. Massive starters or starter beers used in all cases. |

Consider a bit of gypsum to provide a bit of crisp, flinty finish. Gordon recommends 1 tsp of Calcium Chloride in the mash and 1/2 tsp of Gypsum in the boil. My additions are noted in 'Other'.
Pitch yeast at 67, ferment at 68. Then let temp rise to 70 toward end of fermentation to avoid diacetyl.
Carbonate to just under 2 volumes Co2. Serve closer to cellar temperature. (about 55F)
