Notes: Si no se dispone de la levadura liquida descrita, se puede utilizar la levadura seca Saphale S-04. Y Se necesitarían como 2 sobres de 11,5 gramos unos 23 gramos en total.
Si se utiliza la levadura liquida descrita se necesitaría un vial de 100B de células y hacer un starter o bien utilizar 2 viales para estar seguros.
Para el agua, utilizamos el agua de partida Agua Font Agudes que se puede encontrar en Mercadona. Las adiciones de sales se hacen a toda el agua a utilizar, no se por que en la receta aparece que solo se añade al Mash (tengamos esto en cuenta)
Las adiciones de Ácido se realizan tal y cómo aparecen en la receta: al macerado y al agua de aspersión (cálculos realizados para esta receta y utilizando Agua Font Agudes)

| Notes: Do not use Wy 3522 Ardennes yeast. Sparge with 9.5 Gallons RO. Collect 12.5 gallons. Note 2 Orval dregs in each 5 gallon secondary. Use Orval that has been stored at room temp not refrigerated. Bottle into Champagne bottles using 3oz bottling sugar/5 gallons. Brett will work for years to carbonate. (First batch way way over carbonated with 7oz per 5 gallons) Target IBU is around 25 to 30. The Dry hop with Styrian Goldings is essential. Original recipe calls for Perle bittering hops but I have found Perle are way to harsh. |

Notes: Washed yeast from primary fermentor of batch #4. Kept in fridge for 1 week and made starter 27 hours before pitching into #5 batch. 1.6L starter with nearly 1 cup DME and pinch of yeast nutrient.
First all grain batch. Briar will be brewing after mash.
Preboil gravity at 1.035 at 95F
OG was 1.050
I used 1 gal too much water on 2nd batch sparge. 3.5g, 2.5g, 2.5g would've worked out perfect for the beer. Maybe this is why I was .006 lower on OG than recipe called?
1/16/15 - Bubbles in airlock have stopped two days ago. Fermenting consistently at 61-64F in closet wrapped in 2 towels. |

Notes: Infusion Mash at 155F for 60 mins. Add Hops, chocolate, and coffee as specified.
Ferment for 2 weeks at 65F.
Soak .25 oz French Oak chips in one cup Kentucky Bourbon for 2 days. Soak ground kona coffee in 1 cup boiled, cooled water and leave overnight, covered in refrigerator. Strain out grounds and add cold coffee and bourbon, with wood chips to secondary.
Rack fermented stout into this mixture and condition in secondary at 55-60F for 2-6 mos |

Notes: I would use 2 pounds of rice hulls in future brew sessions. This was a very sticky sparge that was quite slow.
Fermentation was very fast and aggressive. First bubbles only hours after pitching. |

Notes: This is a modified clone of the historic New Albion Ale, starting with the recipe printed in Brew Your Own, Jan/Feb 2013, and adjusting it per former owner Jack McAuliffe's recollection, and per Don Barkley's comments.
Targets: OG = 1.055; FG = 1.011; IBU = 30; SRM = 4; ABV = 5.7%
Barkley is a former New Albion brewer who still has McAuliffe's original recipe notebook. Barkley re-brewed the beer in 2009. WLP076 yeast is the original yeast for New Albion, which is still used by Mendocino Brewing Co., and is contained in tiny amounts in Red Tail Ale (can be harvested if you have several bottles). It is not available in 2015, and you can substitute WLP013 (London Ale), Wyeast 1028 (London Ale), or Danstar Nottingham
The original malt was an earthy Bauer & Schweitzer Pale Malt, provided by Anchor Brewing. Barkley suggests 50 % Great Western 2-row and 50% Gambrinus Pale Ale.
Hops started as Bullion hops, then switched to Northern Brewer, then finally wound as Cluster for bittering and Cascade for flavor and aroma by 1977, per Barkley. |

Smells very hoppy (fruity and tropical). It's going to be a little sweet, and it has some alcohol burn at the end.

Notes: Mash low, after mashing and sparging briefly raise temp to pasteurise wort. Cool to about 40 C
Before adding lactobacillus sp. lower pH to 4.5;
Keep bacteria in the kettle until pH drops to 3.4
Then boil normally with hops schedule.
Ferment
Add 900g of pureed blackcurrant to secondary for 7 days. Use hop bag for berries.

Bottled, took pH and it came to 3.25 which is very sour. Tastes sour and dry.
update 02/12/2019
Opened a bottle after 2 weeks conditioning. The sourness is much better and rounder. Galaxy complements berries very well. Very nice easy-drinking beer. |
