Based on Hopwired IPA
Add 500mg potassium metabisulphite to 20 gallons water to remove chlorine / chloramine (if required).
Water treated with brewing salts to our Hoppy flavour profile: Ca=110, Mg=18, Na=16, Cl=50, SO4=275 (Basically Randy Mosher's ideal Pale Ale numbers with slightly less Sulphate). For complete details on how to adjust your water, refer to our step by step Water Adjustment guide.
1.25 qt/lb mash thickness.
Single infusion mash at 152F for 90 mins.
Convoluted counterflow chiller
MORE INFORaise to 168F mashout temperature and hold for 10 mins.
~90 min fly sparge with ~5.6-5.8 pH water (measured at mash temperature). Collect 13.9 gallons.
Boil for 60 minutes, adding Whirlfloc and hops per schedule. Lid on at flameout after post-boil hops are added, start chilling immediately.
Cool the wort quickly to 66F (we use a one-pass convoluted counterflow chiller to quickly lock in hop flavour and aroma) and transfer to fermenter.
Aerate well. Pure oxygen from a tank may be used at a rate of 1 litre per minute for 60 seconds per 5 gallons.
Pitch yeast and ferment at 66-68F (wort temperature). We use modified stainless fermenting buckets in wine fridges.
Add dry hops once fermentation is nearing completion (i.e. 5 points from terminal gravity) and raise the temperature to 70-72F. In our case we simply turn off the fermenting fridges and allow the beer to naturally rise to room temperature. Steep hops for 3-5 days while fermentation finishes. Assume fermentation is done if the gravity does not change over ~3 days. |

Notes: C'est bin beau mais de la ipa, faut jamais en manquer! Quand meme plusieurs changement pour la v3. Je me suis inspiré d'un grain bill recu sur instagram, sa couleur est folle!
1- ajout de golden promise et de honey malt. Ca devrait aider à donner une teinte orangée et aller chercher petite complexité de plus coté malt.
2- levure yeast bay vermont ale. Ca fit le style mais reconnue pour attenuer moins que supposée... Ça me dérange pas de rester avec la London ale III non plus.
3- meme scedule de houblons mais avec un mix simcoe/amarillo en aromatique/floral, David comfirme les taux de AA quand tu auras le temps. Pournoptimiser la couleur, je crois faire les dry hop dans des sacs. On peut aussi faire un fermenteur sur deux et comparer.
4- j'ai augmenté un peu les quantités de grains pour aller chercher 6%
J'ai d'autres point plus géneraux sur nos méthodes que j'aimerais discuter suite à mes lectures récentes.

Notes: Use new Simpsons DRC (Double-Roasted Crystal) Malts for the 2 lb of crystal malts. Use 2 packets of the yeast to ensure proper attenuation.
I filled a 22oz cup with fresh-picked, dried spruce needles (new growth needles). During the boil, I filled a muslin grain bag with the full 22 ozs of needles and steeped like tea at the end of the boil. Several needles will slip out, but they float, so I scooped them up with a sanitized mesh hand strainer before transferring to carboy.
Ferment in primary for 3 weeks, then transfer to a secondary and add .75 ozs of Chinook for a dry hop addition. At this time, add 1 TBSP of cinnamon, 1 tsp of allspice, and 5 drops of vanilla extract into the secondary fermentor.
Let sit in secondary for 2 weeks, then cold crash (I just put mine outside overnight on a 30F night). Transfer to keg, pressurize, pour, and enjoy. |
