Tasting Notes: 10/20/2014:
This beer should have aged more before I kegged it. It sat for 3 months before kegging. It has good head and retention. Mouth of very rounded caramel and buscuity taste. Very subtle notes off the nose of earth and herbal. In the end slight alcohol taste that I am sure would would mellow with just a bit more time. |

Notes: Cold Steep Roasted Barley overnight in 3 litres of water (Avoid tannins and add smoothness)
Boil for 60 minutes. Lid on at flameout, start chilling immediately.
Cool wort to 19c and aerate well. Ferment at 19c until complete.
1 vials White Labs WLP-004 Irish Ale liquid yeast
1.6 litre 1.037 starter with pinch of nutrient - Stir plate 48hrs
Crash 36hrs, decant, warm to 19c and pitch.

Brown Malt is swapped swapped out lbs for bls with Munich 20
Added a lot more 2-row - This would make it more foreign extra
Before Brewing lookup the Invert #3/#4. - at 3 lbs total (1 lbs. at #4 and 2 lbs. at #3). This has been swapped for belgian candy sugar. I made some really shitty invert sugar 3# that might be a bit dark.

Notes: Acidify wort with lactic acid to pH 4.5 before souring.
Incubate lacto to pH 3.6 using sous vide, water bath. Kettle sour: Cool to 110 degrees, pitch lacto, cover wort with plastic wrap and purge headspace with CO2.
Boil, add hops and spices per recipe.
Add pureed cucumber at high krauesen, 2 days into fermentation.
Check saltiness at packaging and adjust as necessary.
Can test pitching lacto with yeast.
8/18: Pitching K-97 without aeration, rehydration as test.
8/13/21: Modifications: Acidulated malt removed, added 4 oz wheat malt. Using Philly Sour yeast. Brewtan B removed, yeast nutrient added. Lactobacillus removed. |

Notes: Yummy! Extra hoppy, which is fine, was thinking as good as the previous year's Honey Pale Ale was, it was a bit on the low side for hop flavor.
This batch is more assertive in the hops, nice golden color. OG and FG were within a hundredth of a point of predicted...WOOHOO!!
The Safale S-04 generated an interesting yeast cake on the bottom of the fermenting bucket. It was thick and more solid than any other I can remember, and it looked almost like a pancake with a spongy (pock-marked) appearance. It stayed intact for the longest time during the bottling process.
Fermented for 14 days at 71° the entire time, in a 6.5 gal plastic bucket. OG was 1.073 and FG was 1.017 for 7.35% calculated ABV. Right on target! This was the first time I tried bottling with shrink-wrap labels and they worked beautifully. |
