I used voss kveik, but WL London fog would also work. Any IPA yeast. Ferment at a temp that nets you a little fruit but not much extra and no fusels.

Transfer to keg, force carbonate, and let it sit for a day or 3 extra until it doesn't taste like hop burn.
In my taste notes I claim that I got mango HiChew, orange juice, grapefruit, overripe passion fruit.
If you want it more bitter use a HopShot during the boil. I don't like the vegetal peanut shell character from boil addition hops I can get in IPAs, so I don't add them. Brewfather says it's 27ibu
I think it was plenty balanced though. With kveik it came out rather sessionable at 7.2% abv |

Notes: Mash: I do BIAB so adjust for other methods. I mashed in at 150 degrees with 6 gallons. 45 minute rest. 15 minute vorlauf. 5 minute mashout. Then i pull my grains and sprage to reach 6.5 gallons preboil volume.
Boil: 90 minute boil. 2oz east kent goldings @ 60. 1 pound lactose sugar @ 15 minutes (this will increase gravity but is a non fermentable sugar). 2 tsp yeast nutrient @10. Chill to 170 for a 20 minute whirlpool where you add 2LB's of toasted coconut in a mesh bag. pull coconut and finish chilling. Finish knocking out into your fermenter, pitch yeast, aerate by shaking, put in fermentation chamber.
Ferment: Let ferment for 7 days then add 1LB of toasted coconut in a mesh bag as a dry hop for 4 days. Procedure for sanitizing coconut: Clean a large mesh bag with PBW and then soak in starsan. Toast your coconut until golden brown in the oven. Add toasted coconut to a large sanitized bowl and pour about 1oz of vodka over coconut. Stir in the vodka. (this helps sanitize coconut further even though the heat from toasting it should have killed most bacteria). Over a sanitized bowl, add your freshly toasted coconut to the sanitized bag and tie off. Let sit about 7 more days as fermentation might start again from the coconut. Raise fermentation to 70 degrees for 1 day as a diaceytl rest then cold crash and package.
NOTE: this has a huge coconut flavor and aroma. Also, this has a ton of chocolate flavor from the malt. If you prefer less coconut just dry hop with half the amount. |

Notes: Last holiday season I needed a festive beer to drink under the tannenbaum, so I moving away from any “Wassail” style of heavier bodied winter warmers with orange and clove flavors and going with a comforting favorite like oatmeal cookies which include some flavorings and spices such as: toasted oatmeal, raisins, cinnamon and vanilla.
– Toast the raw oats in the oven at 300ºF until it becomes golden brown and smells like cookies. (Takes around 1 hour)
– Use a mesh bag (aka Brew-in-a-Bag) for grist and oatmeal in the mash.
– 90 min. add Northern Brewer hops
– 15 min. add Irish moss
– 5 min. add East Kent Goldings hops
– Post boil add Raisins
Add to secondary Vanilla and cinnamon
I made homemade Dark Brown sugar made by mixing the proportions of 1 cup of cane sugar to 2 tbsp of molasses. The recipe calls for 10 oz. of dark brown sugar which is almost 2 cups loosely packed and I added 4 tbsp. of molasses plus an extra tablespoon to make it dark brown sugar.
Add raisins at the end of the boil to plump them up.
Lightly carbonated using 30.42 g. of Candi sugar at 64ºF to produce 2.0 vol of CO2
The aroma is toasty, vanilla, cinnamon and there is a big bubbled light tan head; the flavor is malty sweet, raisiny, "bourbony"; full bodied, unctuous mouthfeel; light but refreshing carbonation. |

Notes: Pitch 2 packets of yeast.
Don't set 2 different times for the 68 degree as wont have enough settings. Set power to 1200w and will be fine. Same to get to 78 then normal for boil.
Allow to ferment for 12 days.
Then add first dry hop.
4 days later add second dry hop.
After second dry hop has been in for 3 days bottle in normal way.
If putting in the keg, wash and sanitize keg full to the brim and put lid on keg.
Sanitize and length of hose that fits on to fermenter tap and long enough to reach bottom of keg.
After 10 mins empty some starsan from keg and into a bowl and put the keg lid in it.
Sanitize keg tap and attach hose to it.
Make sure hose stays at the bottom of the keg and doesn't create bubbles in the keg (thats oxygen and you do not need that)
Fill keg to within 3 inches of the top then replace keg lid.
Attach C02 to keg and set C02 pressure to 30psi.
Pull safety valve on keg in short bursts about 6 times to force oxygen out.
Leave C02 connected for 3 days and then taste to check for carbonation.
If good reduce to around 17psi.
If bottling, bottle in normal way.
Leave in dark cupboard for 14 days then fridge for 48 hours then taste. |
