Start at 68* raise over 4 days to 73* hold at 73 for 10 days.
As Primary slows down, add 1/2 the belgian candi sugar.
2L stepped up to 3L starter
I calculated the entire amount of Candi sugar under fermentables just for the recipe design. Once I actually am ready to brew, I will remove 1/2 of the sugar to make my gravities line up correctly (i.e. preboil, post boil)

Fragrance out of this world, taste citrus, pine, grapefruit. The additional of the hops at 185F after the boil added a superior taste and fragrance, this is a new method for me and will be using for all brews going forward. Home grown hops add so much more character than purchased pellets or leaf, there is no comparison |

Notes: It's been fun following this thread, which I started a few years ago. I'm onto somewhere around my 7th attempt at cloning this beer. My last try had the right flavor but the carbonation was a bit off and the mouthfeel was too thin. So I'm employing a step mash and I'm going to carb in the keg with sugar, instead of force carbing with straight CO2. I brewed this recipe yesterday. It went well, only flaw was my efficiency was low and I missed my targeted OG of 1.081. My second use of a Grain Father so I'm still figuring out how to get better efficiency. I ended up starting at 1.075.
5.5 Gallon Batch - Filtered Tap Water w/ 3 TSP Calcium Carbonate

4oz Flaked Oats
4oz Oat Malt

I'm going to follow the fermentation schedule in Brew Like A Monk, 23.8 degrees for the first week. I might go a bit longer. Then I plan to secondary at 0C for three weeks before kegging (I didn't use any finings so I'm going to have to cold crash to clear it up a bit). I'll update in a few weeks when I transfer to the secondary. |

Notes: Mash at 149°F (63°C) for 90 minutes, drain, and sparge to yield 5.5 gallons (18.9 l). Allow the wort to cool to 110–120°F (43–49°C), and pitch your Lacto culture. Kettle sour to the desired perceivable acidity level (should be sharply sour). See “The Art of Tart” for more information.
Boil for 15 minutes, adding hops at the start of the boil.
Chill, pitch the Wyeast 1007, and ferment at 65°F (18°C). After completing fermentation, package to 3.5 volumes of CO2.
add pomegranate juice after high Krausen. Add 8 points to Gravity making it 1.045 when it’s all said and done. |
