Notes: I think I'll add cooked cherries to 2ndary then rack over them from primary.
For the roasted grains, I used 3 times the recipe weight above, and cold-steeped in water for 24 hrs using 1 gallon per 3 lbs of grain (just used 2 gal for this batch)
When doing this and on brew day go to the mash calc page and adjust the weight of the grain in the mash down to roasted grains taken out to get water volumes

Learned nibs primarily impart nose so doing 2oz cocoa powder in the boil at 15 min and 2 oz nibs. 2-4 nibs in the 2ndary with the cherries
Low mash temp which perplexes me since the numbers were on. Doing a 1.5G decoction 30 minutes in to the mash |

Primary Fermentation - The hops are missing as bitterness - add 1.5 kg.(+1.3-1.4% abv) brewing sugar in 5 l. of water and 15 g. of Cascade hops boil for 15 min. put in primary.
Dry hop with 15 g. cascade in secondary.
The expected abv is 6.5%.
American - Pale 2-Row is BG Malt.
German Wheat Malt is instead of flaked oats.
Third hop addition is after boil( in primary) there was a lack of bitterness so I added a bit. |

Notes: Toasting the pecans brings out more flavor and will help remove oil from the nuts. This process might take some time to complete, but it is worth it. To speed up the process, spread them out over two cookie sheets.
Toast coarsely chopped pecans in oven on parchment paper at 325 F for about 10 minutes. Do not grease cookie sheet or use any oil. Do not let the pecans burn. Remove sheet from oven. Place nuts in paper bags and let them rest. The paper bags will soak up oil. While one batch of pecans is resting in bags, put the other sheet in the oven to toast. Alternate in this manner until the bags are not soaking up any more oil.
Place pecans in nylon bags for use in fermentor. |
