Notes: 6 mars: le moût a infusé 1h15 min et étonnamment, n'était pas très sucré!?!
Houbllon N. Brewers ajouté dès le début avant même l'ébullition (Whirlpool).
4 g de gypse
2 g de sel de mer
Le grain utilisé n'est pas américain c'est du Pilsner Canadien lequel n'est pas listé dans la liste déroulante.
***** 4 graines entières de cardamome ont bouillis 8 minutes en même temps que le Irish Moss, à la fin de l'ébullition!!
Les graines ont été retirées après l'ébullition.
Densité mesuré: 6,5% ABV
Goût du moût présentant une amertume certaine et -PERSISTANTE- que j'attribue à la cardamome. Lors du transfert en tourie, le 15 mars, le goût est devenu plus équilibré et l'amertume plus fondue avec la masse.
J'ajoute 30 g de houblon Santiam dans la tourie pour «booster» l'arôme de la bière à venir.
La tourie est pleine à 95% (niveau à 3 po du début goulot). |

Notes: 4 baies de genièvre mis en tourie pour 6 jours.
Priming Method: 100 g de Dextrose
4 g de MgSO4 et 3 g de Ca2SO4 dont demi ajouté à la maîche et demi ajouté en ébullition.
Environ 16 litres d'eau de source ont été employée le reste étant de l'eau du robinet bouillis.
La D I mesurée était «facilement» de 1,060 soit plus de 6% d'alcool malgré le fait que je n'ai pas ajouté de sucre comme dans la recette précédente!
La bière, goutée 2 jours plus tard révèle des notes (au nez) prononcées de bananes et d'ananas avec une touche de pin. Au palais c'est crémeux, des houblons balançés, sur une trame soyeuse,onctueuse avec un arrière-goût tropical. - Humm!!
19 février: 200 g de sucre de table ajouté.
18-19 février: Trace de «poulet frit» décelable au nez-goût!!!!! La vieille j'ai fait rôtir un poulet au four!! (le lien?)
26 février: 6 g de houblon Mosaïc ajouté en tourie (3 jours de macération en moût).
1er mars: embouteillage: 17 litres de bières dont comprenant 1 litre d'eau de source (j'ai coupé la bière pcque trop forte au goût et au nez). -Par ailleurs, j'en ai surement bû 3 litres depuis les 3-4 premiers jours).
La bière sent les fruits tropicaux et l'abricot mais son goût est «lourd» (pas élégant). Au goût c'est plaisant mais inélégant (trop de malt torréfié et trace de poulet frit???)
